This cheesy cauliflower casserole is a great low-carb, high-fat dish when you want to enjoy a comforting, wholesome meal without being kicked out of ketosis.

Loaded Cauliflower Bake

cauliflower,

butter

heavy cream

cream cheese

sharp cheddar cheese, separated

Salt and pepper

bacon,

green onions

In a large pot of boiling water, blanch the cauliflower florets for 2 minutes. 

Drain the cauliflower and dry it using paper towels.

In a medium pot, melt together butter, heavy cream, cream cheese, 1 cup of shredded cheddar cheese, salt, and pepper until well-combined.

In a baking dish, add cauliflower florets, cheese sauce, all but 1 tablespoon of crumbled bacon, and all but 1 tablespoon of green onions. Stir together.

Top with the remaining shredded cheddar cheese, crumbled bacon, and green onions.

Bake until the cheese is bubbly and golden and the cauliflower is soft, which should take about 30 minutes.

Made this last night and my whole family loved it. Super easy and all ingredients already in my kitchen.

Made this with a mix of broccoli and cauliflower.  Put florets on cookie sheet, tossed with evoo, sprinkled Himalayan salt and roasted them at 450f for about 20 minutes.  Let them cool before putting in casserole pan/baking dish. Very Good -Thanks!!

Made this recipe twice and once with Broccoli. Cheryl would not eat Cauliflower, she loves this recipe. For the Broccoli,Ijust poured the cheese sauce on top. Delicious

trying to print the recipe and why does the "guides , products, recipes, blog , podcast , search pop up box enter into the printing. It blocks out

Hello, I love your recipe and have served it on several occasions. Would you happen to know how to do this in an Instant Pot? I have one that has a saute/browning feature.

Delish recipe - was a big hit at Thanksgiving!  Will add this to my weekly menu! Love the idea of roasting the cauliflower first rather than blanching -

This is delicious. Made it several times and always comes out well. Do you have an adaption to make this in an Instant Pot? I got one for Christmas and want to try this!!
