Lohikeitto, the absolutely delicious salmon soup that is popular Nordic countries. It's dilly, creamy, buttery and has huge chunks of salmon and hearty vegetables. Not only does it taste amazing but it comes together in just 30 minutes.

Lohikeitto (Finnish Salmon Soup)

salmon

salted butter

tbsp shallot

tbsp minced garlic

stock (seafood

carrots (sliced)

red potatoes (cubed)

cream (heavy cream or half & half)

dill (finely chopped)

salt

Pepper

Prepare Ingredients– skin and cube salmon, slice carrots, mince garlic and shallots, and dice potatoes.

Simmer Broth &amp; Vegetables– Over medium heat, melt butter in a large stock pot. Add minced garlic &amp; minced shallots, cook and stir frequently for 1-2 minutes until fragrant. Add potatoes, carrots, and salt and pepper to pot. Give everything a stir and pour in stock. Turn heat to high and bring stock pot to a boil. Cover with lid and simmer for 12-16 minutes, until vegetables begin to soften.

Add Salmon &amp; Cream– Remove lid from pot and turn heat down to medium-low. Add salmon chunks &amp; cream to soup. Stir and simmer uncovered for 5 minutes longer.

Add Dill & Plate: Remove stock pot from heat. Stir in chopped dill, re-cover with lid, and allow to sit undisturbed for 5-10 minutes more. Ladle soup into bowl, and top with a bit of pepper. Enjoy!

Poireaux - 150 grammes

Carottes - 150 grammes

Pommes de terre - 220 grammes

Cube de fumet de poisson - 1

Sel - 0.5 cuillère à café

Crème fraîche liquide entière - 250 grammes

Pavés de saumon - 300 grammes

Aneth fraîche - 8 brins

Ajout d'ingrédient

Mettre 1 gousse d'ail dans le bol du Thermomix.

Ajout du couvercle

Ajoutez le couvercle avec le gobelet doseur

Programmation du Thermomix

Précisions

Ajouter 150 grammes de poireaux (seulement les blancs) dans le bol du Thermomix.

Ajouter 150 grammes de carottes épluchées et coupées en bâtonnets dans le bol du Thermomix.

Ajouter 20 grammes de beurre dans le bol du Thermomix.

Ajouter 220 grammes de pommes de terre (à chair ferme) coupées en bâtonnets dans le bol du Thermomix.

Ajouter 600 grammes d'eau dans le bol du Thermomix.

Ajouter 1 cube de fumet de poisson dans le bol du Thermomix.

Ajouter ½ cuillère à café de sel (à ajuster en fonction des goûts) dans le bol du Thermomix.

Ajouter 2 pincées de poivre (à ajuster en fonction des goûts) dans le bol du Thermomix.

A ce stade continuer la recette 10 minutes avant de servir la soupe.

Ajouter 250 grammes de crème fraîche liquide entière dans le bol du Thermomix.

Ajouter 300 grammes de pavés de saumon coupés en dés dans le bol du Thermomix.

Dégustation !

Mettre 8 brins d'aneth fraîche ciselées à répartir dans les assiettes dans le bol du Thermomix.
