Heat 1 tablespoon of oil in a large pan over high heat. Add the steak, season with salt and pepper, and cook until browned, 5-6 minutes. Remove from the pan.

Heat the remaining tablespoon of oil in the same pan, then add the red onion and cook for about 5 minutes, until softened and browned. Add the tomato, garlic, and aji amarillo paste, and cook for another 5-7 minutes, until the tomatoes have released some of their juices, but are still intact.

Add the soy sauce and vinegar and stir to combine, let cook for 1 minute.

Add the steak, fries, and cilantro. Toss gently to coat the fries in the sauce.

I put a healthier spin on Lomo Saltado (Peruvian Beef Stir Fry) one of my favorite Peruvian dishes!

Lomo Saltado (Peruvian Beef Stir Fry)

canola cooking spray

(5.3 oz potato, russet

olive oil

garlic powder

kosher salt and black pepper (to taste)

sirloin

kosher salt (to taste)

tsp cumin

black pepper (to taste)

onion

mini yellow bell peppers

jalapeno

garlic (crushed)

tomato

apple cider vinegar

cilantro

Preheat the oven to 400°F.

Lightly coat a baking sheet with cooking spray.

Cut the potato lengthwise into 1/3-inch thick slices; cut each slice into 1/3-inch fries. Place on the baking sheet and toss with oil to evenly coat. Season with garlic powder, salt and pepper. Place on a single layer onto the greased baking sheet.

Bake uncovered on the lower third of the oven for about 25 minutes or until tender crisp and golden.

Meanwhile, season meat with salt, pepper and cumin.

Heat a large wok over high heat. When hot add the oil and the steak, cook about 2 minutes, until browned on both sides. Add the onions, bell pepper, jalapeno and garlic and cook 2 minutes. Add the tomato, soy sauce and vinegar and cook 1 more minute. Season with more salt as needed, remove from heat and finish with cilantro.

Serve immediately with french fries and divide evenly between 2 plates.

Korean Tornado Potatoes Recipe by Tasty

In a small bowl, mix together the Parmesan cheese, Korean red pepper, sugar, and ramen seasoning.

Cut the potatoes into ribboned curls using the ribbon blade on a spiralizer. If you don’t have a spiralizer, insert a skewer into each potato and, working in a spiral motion, cut in the opposite direction you are turning the skewered potato, making a thin, even spiral all the way down the potato. A spiralizer is recommended.

Gather the potato curls together, then wrap each curl around a wooden skewer, spacing out the potato evenly. Set aside to dry for 5 minutes.

Heat the canola oil in a deep pot until it reaches 350ºF (180ºC).

Fry the potatoes until golden brown, 3-5 minutes, then drain on a paper towel-lined baking sheet.

While the tornado potatoes are still hot, season with salt and sprinkle with the cheese mixture.

Heat the oil in a large pan over medium-high heat, then add the red onion and cook for 5 minutes, until browned.

Add the tomato, serrano, and garlic. Stir well, cover, and cook for 5 minutes, until the tomatoes have softened.

Add the garam masala, turmeric, and cumin. Stir, reduce the heat to medium, and cook for another 10 minutes, or until the sauce clings to the potatoes and they soften slightly.

Stir in the lemon juice and cilantro, then add the fries and salt. Toss well to coat. Serve immediately.

El lomo saltado es un plato peruano que enamora a muchos con su juguito delicioso y esa carne sellada y con un toque ahumado.

Receta de lomo saltado peruano

aceite vegetal

tazas arroz blanco pregraneado

diente ajo

tazas agua fría

1½ cdtas sal

900 g papas

500 ml aceite vegetal

aceite vegetal para cocinar

kg lomo fino (PERU) /

ml vinagre de vino blanco (o vinagre de manzana o vinagre de jerez)

150 ml soya o sillao

cdas salsa de ostra / salsa de ostión ((opcional))

80 ml pisco peruano ((opcional))

tomates (sin pepas y en tiras)

cebolla morada grande (en tiras)

Ralla, muele o pica finamente el ajo y sofreírlo a temperatura media-baja con un poco de aceite vegetal.

Agrega el arroz y calienta en el aceite mientras mezclas por un par de minutos.

Agrega el agua y espera a que rompa hervor.

Tapa y deja que se cocine por 15-20min a fuego mínimo o hasta que se haya secado. Mezcla con un tenedor para granearlo y reserva.

Para el arroz

Pela las papas y córtalas de tamaño similar para una cocción pareja.

Remoja las papas en agua con 3 cdas de sal por lo menos 30min.

Retira las papas del agua y sécalas muy bien con papel de cocina.

Precalienta el aceite a fuego medio-bajo y cocina la mitad de las papas. Solo deberías ver un poco de burbujas. Retíralas cuando están cocidas (prueba con un cuchillo o mondadientes, deberían estar suaves) y ponlas sobre papel de cocina para continuar con la otra mitad de las papas.

Una vez que las papas estén fuera del aceite, sube la temperatura a media-alta y espera a que caliente. Fríe las papas en dos tandas de nuevo, y ponlas sobre una rejilla para enfriar y ésta sobre una bandeja para atrapar el aceite que cae.

Échales sal y mételas a un horno precalentado a 100°C/200℉ mientras preparas el lomo saltado.

Para las papas en doble fritura*

A temperatura muy alta deja que caliente bien la sartén, hasta que humee. Lo ideal es usar un wok pero si no tienes uno puedes usar cualquier sartén.

Agrega aproximadamente 1 cucharada de aceite vegetal y pon encima los trozos de carne, pero solo suficientes para llenar la mitad de la sartén, para que puedan dorarse. Agrega sal y pimienta. No muevas la carne por un minuto y luego dale la vuelta para que se doren por todos los lados. Si los andas moviendo mucho no se van a dorar. Es importante que los trozos no sean pequeños para que no se seque. En este punto solo estamos sellando, no queremos cocinar por completo la carne, se sigue cocinando con la salsa.

¡Atención! Si vas a flambear, o prender fuego en la cocina, siempre apaga tu extractor. Una vez dorada la carne, tienes 3 opciones:1) Si tienes cocina a gas, gira con cuidado la sartén para acercar el aceite a la llama. Se debería prender. Si no se prende puede ser que tu sartén no esté suficientemente caliente o que no tienes suficiente aceite en la sartén. Cuando se haya apagado el aceite, agregas aproximadamente 1.5 cdas de salsa de soya / sillao, 1 cdta de vinagre y opcional 1 cdta de salsa de ostra/ostión. Si quieres también ponerle pisco y prenderlo que le da un toque delicioso.2) Si no tienes cocina a gas y quieres darle ese toque ahumado, es buena idea flambear con pisco. Echas aproximadamente 1.5 cdas de salsa de soya / sillao, 1 cdta de vinagre, opcional 1 cdta de salsa de ostra/ostión y al final una cucharada de pisco. Con un soplete lo puedes prender fácilmente o si no puedes hacer un rollito de papel de cocina, prender la puntita y acercarlo a la sartén. Con el mismo vapor del pisco se prende inmediatamente.3) Si no quieres flambear, no pasa nada. Echas aproximadamente 1.5 cdas de salsa de soya / sillao, 1 cdta de vinagre, opcional 1 cdta de salsa de ostra/ostión y opcional al final una cucharada de pisco. Dejas que hierva sin prenderlo.

Dale unos segundos extra para que se espese ligeramente la salsa. Seguimos a fuego alto.

Retira la carne y su jugo y repite con las siguientes tandas hasta terminar con toda la carne.

Repite el mismo procedimiento con el tomate, cebolla y ají. Eso sí, este paso hazlo más rápido porque no queremos que se deshagan las verdras.

Retorna todo a la sartén por un minuto para recalentar. No más tiempo que eso porque se puede recocinar la carne.

Termina agregando la cebolla china / cebollín y sirve inmediatamente.
