To be sure that you have enough liquid to make gravy after the turkey is cooked, put at least 4-6 cups of water in the turkey pan. That way when the turkey juices drip into the pan you will have a tasty broth and plenty of it.

After the turkey is done, pour the liquid into a saucepan and bring to a boil.

Add the xanthan gum into the saucepan and keep stirring until the gravy reaches its desired thickness.

Strain pan drippings and add enough water or stock to make 2 cups. Place in a pot and reduce the liquid to thicken a bit by boiling down for about ten minutes.

Add onion to liquid and finely puree with a stick blender or high speed blender. Cook the onion for a few minutes to further reduce the liquid.

(To prevent cooking the egg, the hot liquid needs to be incorporated into the egg yolk very slowly) Remove from heat and slowly pour about 1/4 cup of the hot liquid into the egg yolks while whisking to temper them. Gently pour the egg yolk mixture into the hot liquid in the pot while whisking. 

Continue to whisk and simmer the gravy liquid. Whisk in the coconut oil or butter and stir until smooth. You can continue to simmer. Butter tends to thicken the gravy better than coconut oil, but the gravy will thicken more as it cools with the coconut oil.

Easy Keto Gravy Recipe

In a large saucepan over medium heat, melt the butter. Add the neck, giblets, onion, and celery. Sprinkle with salt, pepper, and any addtional herbs. Sauté until nicely browned, about 5 minutes.

Add the broth. Bring to a boil and then simmer 30 to 40 minutes. Use a slotted spoon to remove the neck and giblets.

When the chicken or turkey is done cooking, remove to a platter and tent with foil. Pour any pan juices and drippings into the stock, scraping up any browned bits for flavor. Spoon off excess any fat from the top.

Bring to a boil and cook until reduced by about one quarter. Set a fine mesh sieve over a bowl to strain out the solids. Discard the solids and return the liquid to the pan.

Whisk in 1/2 tsp of glucomannan and let sit 10 minutes to thicken. If you like very thick gravy, whisk in the remainging glucomannan. The gravy will continue to thicken up as it cools. If it gets overly thick, add a little chicken broth to thin it out as you re-warm it.

This gravy recipe is the one I came to the site to find. I can always depend upon finding what I need here as an insulin resistant person who pushed back type II; It never disappoints. What a gift Carolyn Ketchum is to those of us who must deal with blood sugar control every day.

I’m already prepping for Thanksgiving this year and am excited to try this. I usually make my gravy 2-3 weeks before the holiday, freeze it and then thaw and reheat. Do you know if glucomannan will freeze and defrost ok? Thx.

Make-Ahead Flourless Turkey Gravy (Low-Carb)

It has a rich onion taste and is fit for food dishes like French onion soup. Yellow onions are typically available throughout the year. This onion is higher in sulphur than the white onion, which gives it a stronger, more complex flavour. A dozen varieties of yellow onion are grown, following the time of year....

Preheat the oven to 425°F.

Put the turkey wings, cauliflower, onion and garlic cut side down on a large rimmed baking sheet. Drizzle the olive oil over everything, season with 1/2 teaspoon of salt and black pepper to taste, and toss to combine. Roast, turning everything halfway through, until the turkey skin is golden and some of the fat has rendered and the garlic is caramelized, about 50 to 55 minutes, careful not to burn.

Once done, remove the garlic from the skin and place in a large pot with the onion (discard any burnt parts), cauliflower and turkey. Pour the chicken broth onto the baking sheet and use a spatula or wooden spoon to scrape up all of the browned bits from the pan (put the pan over a burner turned to medium to help with any stubborn parts).

Pour the broth and pan drippings into the pot with 6 cups of water, 1 1/2 teaspoons salt and the sage and thyme and bring to a boil. Reduce the heat to low and gently simmer, partially covered until the meat easily comes off the bone, at least 2 hours, or as long as 3 hours.

Discard the turkey wings, thyme and sage. Pour the mixture through a sieve to separate out the solids. Remove as much fat as you can from the stock: either pour the stock into a separator if you've got one, or refrigerate or freeze the stock so the fat solidifies and can easily be removed. If refrigerating the stock, plan to make the gravy right before serving and warm the ingredients up first.

For the Turkey Stock:

Add the vegetables (onion, garlic and cauliflower) to a high speed blender with bells seasoning and the remaining 1 1/2 teaspoon salt. If the stock is hot, carefully pour in the stock, a little at a time, until the gravy is your desired consistency. If you added all the stock and the gravy is still too thick, switch to adding a little extra water as needed. (any extra stock can be saved for anotheruse). If you don&#39;t have a high speed blender, pour the stock through a fine mesh sieve to get the ultimate smooth gravy texture.

When ready to use, heat up on stove, taste for salt and serve with your turkey dinner. Makes about 4 cups

To Make the Gravy:

This was perfect as my husband eats low carb and loves gravy. I made this Tuesday night and then reheated on Thanksgiving. I did use chicken wings as I didn’t have turkey wings available. One suggestion is make your onion sections bigger as the smaller pieces will burn.

This looks yummy! Can it be frozen? Since I'm cooking for one there's no way I could use it all before it went bad, but looking at the ingredients I think it would freeze okay.
