Nutty chicken satay strips

tbsp chunky peanut butter(without palm oil

garlic clove,finely grated

tsp Madras curry powder

soy sauce

lime juice

skinless, chickenbreast

about 10cm cucumber,cut into fingers

sweet chilli sauce,to serve

Heat oven to 200C/180C fan/gas 4 and line a baking tray with non-stick paper.

Mix 2 tbsp chunky peanut butter with 1 finely grated garlic clove, 1 tsp Madras curry powder, a few shakes of soy sauce and 2 tsp lime juice in a bowl. Some nut butters are thicker than others, so if necessary, add a dash of boiling water to get a coating consistency.

Add 2 skinless chicken breast fillets, cut into strips, and mix well. Arrange on the baking sheet, spaced apart, and bake in the oven for 8-10 mins until cooked, but still juicy.

Eat warm with roughly 10cm cucumber, cut into fingers, and sweet chilli sauce. Alternatively, leave to cool and keep in the fridge for up to 2 days.

You only need 3 main ingredients to make these low carb keto tortilla chips. If you roll them out thinly, they become really crunchy. My kids thought the tasted much better than Doritos :)

Keto Low Carb Tortilla Chips

pre-shredded mozzarella

almond flour (ground almonds work well too)

tbsp psyllium husk (or 2 tsp psyllium husk powder)

salt

garlic powder/onion powder/paprika

Heat your oven to 180 Celsius / 356 Fahreheit.

Melt the mozzarella in the microwave (ca 90 sec-2 min). Alternatively, heat gently in a non-stick pot.

Add the almond flour/ground almonds and psyllium husk plus the salt and spices, if using. Stir until combined, then knead until you have a smooth dough.&nbsp;

Separate the dough into 2 balls and roll out between 2 sheets of baking/parchment paper. Roll out as thinly as possible! The thinner, the crispier your tortilla chips will turn out.&nbsp;

Cut into triangles (I used a pizza cutter) and spread out on a sheet of baking paper so the tortilla chips don't touch.&nbsp; &nbsp;

Bake 6-8 minutes or until browned on the edges. Baking time will depend on the thickness of your tortilla chips. I baked mine in 2 rounds, plus a third round for the off-cuts.

Chocolate Peanut Butter Keto Fat Bombs

This Low Carb Roasted Almonds recipe makes deliciously salty, crunchy almonds, with a light smokey flavor. They are the perfect low carb snack!

Low Carb Baked Almonds - Roasted Smokey Flavor

½ cups Almonds (raw)

Salt

Liquid Smoke

Water

Avocado Oil

Preheat your oven to 175C/350F. Line a large baking sheet with parchment paper and set aside.

In a small bowl mix together the salt, liquid smoke, and boiling water. Stir until as much of the salt is dissolved as possible.

Add the almonds to a large bowl and pour over the salt mixture. Mix well to ensure all the nuts are coated. Leave to sit for 2 minutes.

Pour the almonds onto your prepared tray and spread out into an even layer.

Bake your almonds for around 15-20 minutes total. Give them a stir after about 8 minutes, and another stir every 5 minutes until nicely roasted. The check doneness, remove a nut and cut in half, the center should be a very light brown.

Remove the nuts from the oven and pour into a heatproof bowl. Drizzle over the avocado oil, and sprinkle with a couple of pinches of fine salt. Stir well to ensure all the nuts are coated.

Leave to cool completely, the almonds will soak up the oil as they cool.

Once cool, enjoy as a snack, or store in an airtight container!

Low Carb Baked Almonds Recipe Roasted to Perfection - Keto Snack

Delicious snack bars that travel well and keep you on your eating plan.

Low Carb Almond Snack Bars

¼ cup virgin coconut oil ((in liquid state))

eggs

pure liquid stevia

unsalted almond butter ((no sugar added))

pure vanilla extract

almond flour

tbsp. chia seeds

baking soda

cinnamon

allspice

Preheat oven to 350° F.

Mix all ingredients together in a medium to large mixing bowl.

Spoon the mixture into an oiled bar pan or into an oiled baking dish. Bake for 20 minutes or until the logs are baked through.

Remove from oven and cool enough to handle. Remove from bar pan and allow to cool fully on a wire cooling rack. Transfer to an airtight storage container. Store in the fridge.

Single Serving Fast Method:

Melt the coconut oil and whisk in the cacao and almond butter until no lumps remain. Spoon 1 tablespoon of the mixture each into 32 small paper muffin cups.

These are great.  I have found a couple of things that kick them up a notch.  I add  little vanilla extract and almond extract, maybe 1/2 teaspoon of salt and a couple of packets of stevia.  The almond butter I get doesn't have any salt in it so this little bit of salt really is nice.

Made these for my husband as he was having peanut butter and chocolate withdrawals on his low or no carb diet. He loved these. I made them before I left on a business trip and it's a good thing that I didn't try them before he only had a few left. I ate one when I returned and they taste great.

This is the only keto fat bomb dessert recipe that I could find that didn't have any sweeteners at all. Even artificial sweeteners seem to spike my insulin and lead to intense cravings, hunger, and overeating later. I love these even though they aren't sweet! This is easier than layering but still has the taste I was craving. I also like that you offered the sampler size idea. It's nice to try a recipe to make sure you like it before using up a lot of ingredients. Even my hubby who isn't as into non-sweet as I am enjoyed this.

Sugar is really one of the main reasons for people to be unhealthy. We tend not to notice that we've been taking too much sugar in any food that we eat.

My husband, who is on the Keto diet, was quite happy to try these out when I made them for him.  He loves them!  This recipe is a keeper and will be made again.
  I'd like to note that these make just over 32 - 1Tbls size servings, not 32 - 1/2Tbls size servings as stated in the instructions.  1 cup = 16 Tbls and this recipe makes a little over 2 cups.

Love this!  I added some sea salt flakes on top for some crunch and flavour enhancement.  I don't like using highly processed sweeteners even if they are natural and low carb.

Very easy, but when I allowed them to cool/ harden they separated a little and the top has a layer of just coconut oil . I sliced the tops off and the rest was good

avocado oil spray

Heat your mini waffle maker.

Combine chedese, almond flour, garlic powder, and baking powder in a mixing bowl.

Incorporate egg into the cheese mixture and mix well.

Spray mini waffle maker with avocado oil once heated.

Spoon half of the chaffle mixture into the mini waffle maker.

Cook 3-4 minutes or until browned. Remove with two forks or tongs.

Repeat for second chaffle.

Love this recipe. I tried it as it is written the first time. It was great. The second time I made it I added an ounce of cream cheese and 2 more tablespoons of almond flour. It was a perfect bun for our bacon cheeseburger.

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Place the ¾ cup of cottage cheese into cheesecloth or a nut milk bag (or fine mesh sieve) over a bowl. Squeeze or press out as much excess moisture as possible. Discard the liquid. This step is crucial for crispiness.

(Optional) If using powdered seasonings, transfer drained cottage cheese to a mixing bowl and mix them in using a spatula or spoon. Use a bowl scraper to get all the cheese.

Use a small cookie scoop (about 1 teaspoon size) or two spoons to drop small dollops of the drained cottage cheese onto the prepared baking sheet, aiming for ~16 piles. Leave ample space between piles for spreading.
