This fragrant and crunchy cauliflower tabbouleh is the keto version of the iconic Middle Eastern side dish. By replacing the bulgur with cauliflower rice, one portion has just 3g net carbs! Keto tabouli is a tasty, simple salad that the whole family will love, whether they follow a keto diet or not.

Keto Tabbouleh with Cauliflower

cauliflower florets (1 medium cauliflower head)

cucumber (chopped)

tomatoes

parsley (finely chopped)

fresh mint (finely chopped)

red onion (finely diced)

extra virgin olive oil

lemon juice (to taste)

Prepare the cauliflower rice by placing the florets in a food processor and blitzing until it resembles a rice consistency.

Make the dressing by mixing the olive oil, lemon juice, garlic, a pinch of salt and pepper in a small bowl.

Add 1 tbsp of dressing to a non-stick frying pan. Sauté the cauliflower rice for about 5 - 6 minutes on a medium heat until tender. Allow to fully cool.

Meanwhile, slice the cucumber in half and remove the seeds using a teaspoon. Dice.

Add the tomato and cucumber to a mixing bowl. I chose not to take all the tomato seeds as this can make the cauliflower tabbouleh too wet.

Add cooled cauliflower, parsley, mint and dressing to the bowl. Toss to combine, season to taste and serve.

Tabouli with Hemp Hearts | Keto Tabbouleh Recipe

A lightened up, low carb, paleo friendly version of the classic Middle Eastern salad using cauliflower rice.

Cauliflower Tabbouleh

cauliflower rice

cucumbers (about ¼ inch squares)

cherry tomatoes

parsley leaves

mint leaves

scallions (green section only)

lemon

Salt and pepper (to taste)

Add cauliflower rice to a large microwave-safe glass bowl and cook in the microwave by heating at one minute intervals until cauliflower is just cooked (tender but still a little crisp). You can also cook the cauliflower on the stove. Drain and set aside to allow to cool.

In a large bowl, add cucumbers and tomatoes.

Add parsley, mint, scallions to a food processor and chop until herbs are finely chopped. You can also chop by hand if you do not have a food processor.

Add in olive oil, lemon, salt and pepper to taste. I recommend starting with about 1/4 tsp salt and 1/8 tsp black pepper. Blend until everything is just mixed. Herbs should stay small, but this will allow the flavor of the herbs to infuse into the dressing. Again, this can also be done by hand by whisking the ingredients together. Taste and adjust salt and pepper as needed.

Add cauliflower to the large bowl with cucumbers and tomatoes. Drizzle sauce into bowl. Mix and toss until everything is evenly coated in dressing. Refrigerate salad for at least 1 hour to allow the ingredients to marinate in the dressing. Serve chilled or at room temperature.
