Chocolate Chip Baked Oatmeal Muffins

tbsp melted vegan butter

The most delicious no bake high protein cheesecake with a chocolate crack outer layer! This recipe is so easy to make, and is a delicious gluten free sweet treat perfect as a mid morning or afternoon sncak

Chocolate Crack Protein No-bake Cheesecake

low fat cottage cheese (smooth

tbsp low fat yoghurt

water (125 milliliters)

gelatin powder

chocolate of choice

Place gelatin in the 1/2 cup almond milk and let it sit for 5 mins

Place all ingredients for filling (all the ingredients except for almond milk &amp; hot water) in a bowl and combine well. Pour into a high speed blender.

Pour 1/2 a cup of boiling water over the almond milk gelatine mixture and stir until dissolved. Pour mixture into the blender along with the cheesecake mixture and blend until combined well.

Pour mixture into 4 small glass jars or ramekins, and refrigerate until it sets ) roughly 2-3 hours.

Melt 40g chocolate of choice in a double boiler or in the microwave

Pour over the set cheesecakes, spreading a thin layer on each cheesecake surface

Allow chocolate to set for 5-10 minutes.

For the chocolate crack topping:

Start your morning off with this delicious cookie cereal. This high fiber, protein healthy cookie cereal is made of oatmeal and is a delicious healthy breakfast recipe

Protein cookie cereal

oat flour (105 grams)

vanilla protein powder (I used pea protein (30 grams))

chocolate chips (56 grams)

almond milk (50 milliliters-100 milliliters)

Preheat oven to 180 degrees Celsius. Line a cookie tray with oil/ baking paper

Mix all ingredients in a bowl, add as much milk as you need until a thick cookie dough forms (different protein powders need different amounts of milk)

Using a 1/2 tsp scooper, scoop cookie dough into balls and press down with a fork on your lined cookie tray.

Bake in the oven at 180°C for roughly 8-10 mins until golden brown.

Set aside and allow to cool. The cookies should harden. Divide batch into 5 servings &amp; enjoy!

5 Ingredient Coconut Flour Waffles

eggs

almond milk (or milk of choice)

tbsp unsweetened almond milk (or milk of choice)

coconut flour

cinnamon

Heat a waffle maker and spray the inside with nonstick cooking spray liberally. Do not use butter or coconut oil or the waffles will stick.

Place eggs in a mixing bowl with almond milk (use 1/4 cup of ALMOND milk PLUS 2 tablespoons of ALMOND milk - this is not an error!) and whisk together until smooth.

Fold in coconut flour (measured properly), baking powder and cinnamon until combined. Do not over mix. The batter should be thick. Note - if you overmix it will yield smaller or fewer pancakes.

Transfer the batter to the waffle maker and cook 10 minutes. DO NOT REMOVE or OPEN TOO SOON OR WAFFLES WILL FALL APART. All waffle makers are a different, mine cooks quickly so you may need to cook yours longer than 10 minutes.

Carefully lift the waffle from the waffle maker with a small spatula and transfer to a plate while you cook the next one. It&#39;s very important you DO NOT prematurely remove the waffle from the maker or flip the waffle or it will fall apart. Note, you will need to add more cooking spray before adding the remaining batter.

The recipe makes two large waffles (my waffle maker is large). One serving equals a half of a large waffle.
