Luby’s Cafeteria Cranberry Relish

cranberries

oranges

orange zest

apples

sugar

red food coloring

Using your food processor, dump cranberries in a container with a puree blade. Slice and cube apple, removing seeds but leaving the peel on. Add into a processor. Wash thoroughly one orange and scrape zest.&nbsp;

Peel both oranges, section and add to mixture. Add sugar and food coloring. Puree until all is blended. Refrigerate overnight for best results.&nbsp;

Make Luby's Skillet Cabbage at home.&nbsp;

Luby's Skillet Cabbage

green cabbage

bacon (cut into 1 inch pieces)

tomato

water

black pepper

salt

Remove the cabbage core and discard the core.

Slice the cabbage into 1 to 2-inch pieces; you should have approximately 12 cups.

In a very large skillet saute bacon over medium heat until it has cooked half way.   Do not drain the grease.

Add cabbage to the skillet, and add 1 1/2 cups of water to the skillet.

Place a lid over the pot.  It may not fit all of the way, that&#039;s ok. the cabbage will cook down.

After 10 minutes add the chopped tomato, pepper, and salt.  Reduced the heat to low and simmer for about 20 minutes.

You can make a coconut meringue pie just like Luby&#39;s. 

Luby’s Coconut Meringue Pie

half-and-half

eggs

cornstarch

vanilla extract

marshmallows

coconut

pie shells

cream of tartar

For filling, combine half-and-half and butter in a saucepan. Bring just to boil over medium heat.I

In a medium bowl, whisk together sugar, eggs, cornstarch, vanilla, and salt until cornstarch is completely dissolved and the mixture is well-blended. Gradually add to the mixture in saucepan, stirring constantly with a wire whisk. Cook, stirring constantly, about 1 minute or until thickened. Add marshmallows and 3/4 cup of the flaked coconut. Cook and stir until marshmallows melt and mixture is well-blended. Pour into pie shells. Refrigerate at least 2 hours.

Heat oven to 350 degrees.

For meringue, in a large bowl, beat egg whites and cream of tartar until soft peaks form. Add sugar, a small amount at a time, whisking constantly until stiff peaks form. Spread half the meringue over each pie to edge of crust. Sprinkle each with 1/4 cup of the remaining coconut on each pie.Bake 12-15 minutes or until lightly browned. Refrigerate until served. If you don't manage to eat all of your pie in one sitting, be sure to store the remainder in the refrigerator.
