300 gr uncooked lupini beans

Cook the lupini beans in boiling water for 45-50 min over medium-high heat. The water must be always covering the beans, so add more if needed during the cooking process.

Rinse the beans and soak them in clean water. Change the water completely 4-6 times a day for 4- 7 days until there is no bitter taste in the lupini beans.

In a glass container add the beans. Cover with clean water. Season with salt, minced garlic, and if you desire a stronger flavor some olives. Seal with a lid and store them in your fridge for up to 1 month.

Lupini beans the Middle Eastern way. They are cooked from dried, then seasoned with cumin, salt, and lemon juice.

(540 grams) lupini beans (dried)

lemon (juiced)

cumin

parsley (chopped)

Soak&nbsp;lupini beans in water for a few hours.

Add to boiling salted water, and cook until they're soft enough to eat. This should take around 30 minutes but it depends on the variety of the lupini beans you're using.

Rinse the beans, then add lemon juice, ground cumin, and salt. Give it a good mix so cumin and salt and well distributed.

Sprinkle with chopped parsley and serve!

Step 1

In a large bowl, add 1 cup lupin beans, 1 tbsp of salt and 5 cups water. Mixed water through to dissolve salt and soak overnight

Step 2

Discard any water from soaked lupini beans and add to a pot. Top with 5 cups of water and another 1 tbsp of salt and bring to the boil on high. Once boiling, turn heat to med-high and boil for about 2 hours.

Step 3

Once lupin is tender, turn off heat and allow to cool. Once cool, discard water and top with fresh salted water. Serve with salt.
