Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions, usually 7-10 minutes. Then drain and rinse with cold water.

In a medium bowl mix the mayonnaise, apple cider vinegar, sugar, hot sauce, garlic, 1 teaspoon salt, and 1/2 teaspoon ground pepper.

Pour the macaroni in a large bowl. Pour the dressing over the top. Then add the chopped roasted red peppers, kale, bacon, pickle relish, and scallions.

Toss well to coat. Then refrigerate until ready to serve.

Cook macaroni according to package directions. Drain and rinse under cold water until cool. Drain and set aside.

In large salad bowl, make dressing by whisking together mayonnaise, vinegar, mustard, sugar, salt, and fresh cracked pepper to taste. When well combined, add dill pickle relish and minced onion; stir well. Allow dressing to sit at room temperature for 10 minutes for flavors to develop.

Add cooked and cooled macaroni to salad bowl. Toss thoroughly in dressing until evenly coated.

Add diced celery and stir until evenly distributed.

Carefully stir in diced hard boiled egg until evenly distributed.

In a large bowl, combine the red bell pepper, celery, onion, pickles and hard boiled eggs.

To make the dressing, combine the mayonnaise, apple cider vinegar, Dijon, sugar, salt and pepper in a medium bowl. Whisk until well combined and smooth.

In a large bowl, whisk together 1 cup of the mayonnaise, 1 1/2 cups of the whole milk, the brown sugar, salt, and pepper.

Once the macaroni has cooled for 10 minutes, toss with the mixed sauce and let cool to room temperature.

Boil the macaroni

Bring a large pot of water to a boil. Once boiling, generously salt the water. Add in the pasta and cook to al dente, according to package directions. Drain the pasta, rinsing with cold water, and set aside.

Assemble the macaroni salad

Add cooled elbows to a large mixing bowl with the grated carrot, mayonnaise, sugar, garlic powder, onion powder, paprika, turmeric, &amp; cayenne (if using). Season with 1 teaspoon kosher salt &amp; ground black pepper, as desired. Stir to combine, seasoning with additional spices &amp;/or salt as needed.

Serve immediately

This is one of the best macaroni salads I have ever had. So easy and delicious. I used rotini because it's what I had on hand and it was great.
