This pistachio-lime cake, made with both pistachio and all-purpose flour, is flecked with lime zest, strawberries, and chopped pistachios and drizzled with a sweet glaze.

Pistachio-Lime Cake

limes (preferably organic) (zested and juiced (reserve the juice of 1 lime

sugar

eggs (at room temperature)

whole milk (at room temperature)

pistachios (coarsely chopped)

strawberries (washed, hulled, and

confectioner’s sugar

pistachios (coarsely chopped (optional))

Alternately, you can use precut parchment rounds (see the gallery above). It makes lining the cake pan so much easier.

Prepare

Preheat the oven to 350°F (180°C). Cut a 13-inch (33-cm) circle of parchment and ease it into an 8-inch (20-cm) cake pan. The sides will be wavy, which gives the cake its crenulated edge. Spritz the paper with baking spray.

Whisk

In a medium bowl, whisk the flour, pistachio flour, baking powder, and salt together.

Beat

In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand mixer, rub the zest into the sugar with your finger tips to release the oils. Add the butter and beat on medium speed until light and fluffy, 2 to 3 minutes. Scrape down the sides of the bowl as needed.

Reduce the speed to &quot;stir&quot; on a stand mixer or low on a hand mixer and add the eggs, one at a time, mixing until incorporated, about one minute each.

Add the dry ingredients in three additions, alternating with 2 additions of the milk, beating on medium-low speed until each addition is fully incorporated. Scrape down the sides of the bowl as needed.

Fold

Fold in the 1/2 cup coarsely chopped pistachios.

Bake

Spread half of the batter into the prepared pan and smooth with a spatula. Tile the strawberry slices so they cover the cake in one layer. Top with the remaining batter, and smooth the top.

Macerate

Bake until the cake is golden brown, the top looks dry, and a cake tester inserted into the center comes out clean, 30 to 35 minutes.

Cool

Remove the cake from the oven and place the pan on a cooling rack for 10 minutes.

Remove

Carefully lift the cake and parchment shell from the pan and return it to the cooling rack. Cool completely. Gently pull down the parchment to release the cake.

Make the pistachio-lime cake

In a small bowl, whisk together the confectioner&#39;s sugar and reserved lime juice, then drizzle it over the top of the cake. If your glaze is too thick, add more lime juice or water to achieve the desired consistency.

Serve

Sprinkle the 1/4 cup coarsely chopped pistachios on top of cake, if desired.

Macerated strawberries make a simple, yet delicious addition to so many dessert recipes. Fresh strawberries release their juices for even greater sweetness.

Wash, hull, and slice strawberries and place into a large glass bowl. Stir in sugar and allow to stand for 30 minutes for strawberries to release their natural juices, but not so long that they begin to become mush.

If using Grand Marnier, citrus juice or balsamic vinegar, add at the same time as sugar.

Juicy, syrupy macerated strawberries to enjoy on top of ice cream, yogurt, cake, and more-- only three ingredients and ready in just 40 minutes!

Hull the strawberries, then halve or quarter depending on size. Or, you can cube or slice depending on how you want to enjoy the berries.

Place the strawberries in a large bowl and sprinkle with the sugar and balsamic vinegar. Toss together and place in the fridge.

The longer that you let the berries sit, the softer and more jammy they will become. They will start to collapse and become very juicy if let for more than a day in the fridge. I find the sweet spot is about an hour, but depends on how you want to enjoy the berries!

How to Macerate Strawberries

2-4 Tbsp sugar (will vary according to sweetness of strawberries)

Combine 2-4 Tbsp of sugar to every cup of fruit.  Stir to combine, cover and refrigerate for 30 minutes to overnight
