Pineapple Dream Bars

-11 oz. box Nilla wafer cookies

salted butter, melted

cream cheese, softened

salted butter, softened

white chocolate, melted

vanilla extract

sour cream

pineapple

cool whip

In a food processor, combine cookies and melted butter until sand like crumb forms. Reserve 1/4 cup of crumbs for topping.

Pat crumb into a parchment lined 9x9 square pan and freeze for 30 minutes or until crumb has hardened.

Using a small microwave safe bowl, microwave white chocolate in 15 second intervals until melted. Let cool down for a couple minutes.

In a mixer, combine cream cheese, butter and sour cream until mixture is fluffy and mixed through.

Add in the melted white chocolate and vanilla, mix until combined. Spread filling over crust evenly and set aside.

In a large bowl, fold together the drained pineapple and cool whip until incorporated. Spread mixture evenly over filling and top with reserved crumbs.

Refrigerate for 2 hours until mixture has set.

Caramel Apple Pie Magic Bars

Nilla Wafers

(71 grams) unsalted butter (melted)

salt

(118 milliliters) sweetened condensed milk

cinnamon

apple

(340 grams) white chocolate chips

Rolos (unwrapped (or other chocolate caramel candy))

(60 grams) pecans (chopped)

Preheat oven to 350°F. Line a 9x9” square pan with foil and spray with cooking spray.

Process the Nilla Wafers in a food processor until they are a fine crumb. Stir crumbs into melted butter and add salt, stirring with a fork. Press into the bottom of the prepared pan. Bake for 5 minutes.

Stir sweetened condensed milk (SCM) and cinnamon together in a small bowl or measuring cup.

Sprinkle apples, Rolos, pecans, and white chocolate chips over hot crust. Pour SCM over the top evenly. Return to oven and bake another 21-24 minutes until the edges are golden. Cool completely before cutting into bars.
