Homemade Gravy without Drippings

/ 480 milliliters Good Quality Chicken Stock, (preferably low-salt)

/ 480 milliliters Good Quality Beef Stock, (preferably low-salt)

tbsp Unsalted Butter

tbsp Flour

Carrot, (finely diced)

rib of Celery, (finely diced)

small-medium White Onion, (finely diced)

Garlic, (finely diced)

Worcestershire Sauce

tsp Chicken Bouillon ((or half crumbled OXO cube))

tsp Beef Bouillon ((or half crumbled OXO cube))

tsp EACH: Dried Thyme, Dried Rosemary

Salt & Finely Ground Black Pepper, (to taste)

Veg: Melt 3 tbsp butter into a large pot over medium-high heat and add in celery, carrot, onion and garlic. Fry until the veg starts to soften/brown then turn heat down to low-medium.

Roux

Roux: Stir in 3 tbsp flour until a paste forms then slowly start pouring in your stock, whisking as you go to ensure no lumps form.

Season

Season: Add in chicken/beef powder, Worcestershire sauce, rosemary/thyme and salt &amp; pepper to taste. Depending on the saltiness of your stock &amp; chicken/beef powder you may not need salt.

Thicken

Thicken: Simmer for 5-10mins until the gravy thickens, then use a hand blender to blitz until smooth. If you over thicken the gravy just add in a splash more stock. If you want it thicker (it will thicken as it rests/cools), just keep the gravy on a simmer, stirring somewhat frequently until your desired consistency.

Gravy without Drippings

This homemade turkey gravy recipe with pan drippings utilizes aromatics, fresh herbs, and white wine for a flavorful gravy to go with your Thanksgiving meal. This easy turkey gravy recipe can also be made ahead, to save precious time on Thanksgiving.

Turkey Gravy

unsalted butter

shallot

sage leaves

thyme leaves

dry white wine

all purpose flour

turkey stock

turkey

In a saucepan, over medium heat, add 3 tbsp unsalted butter. Once melted, add in the chopped thyme, sage, and shallot. Stir to combine and allow the herbs and shallot to infuse and cook for 5 minutes, stirring frequently.

Add white wine and allow to reduce by half, about 4 minutes. Once reduced, sprinkle the flour over the top and stir until flour is fully incorporated. Add in the turkey stock and 2 tbsp of the pan drippings from roasted turkey (if making ahead of time, omit pan drippings until turkey is roasted).

Once the stock is added, whisk until all clumps are removed. Since the pan drippings are salty, no need to add additional salt. Add freshly ground black pepper and lower the heat to low. Allow to simmer for 15 minutes for flavors to meld. If you want a thinner consistency you can add more stock or water.

You can serve right away along side your dinner or if you're making ahead of time, allow to cool and store in an airtight container.

If made ahead of time: If you made the gravy ahead and want to add pan drippings, return the cold turkey gravy to a saucepan. Over low heat, so you do not burn it, allow it to warm. Once warmed, add a tablespoon or two of your pan drippings to taste, and whisk to integrate into the gravy.

Make Ahead Turkey Gravy

turkey wings (I used 2 more for extra flavor)

onions (roughly chopped)

celery (roughly chopped)

carrots (roughly chopped)

garlic bulb (halved)

bundle (about ¾ package fresh thyme)

olive oil

sage

Chardonnay (or dry white wine)

chicken stock

all-purpose flour

onion (finely diced)

garlic (minced)

turkey broth (from above)

Worcestershire sauce

Gravy Master (optional, for rich color)

garlic powder (to taste)

Salt and pepper

Preheat oven to 400°F.

In a large roasting pan, combine turkey wings, onions, celery, carrots, garlic, and thyme.

Drizzle with olive oil, sprinkle with salt, pepper, and sage, and toss well.

Roast for 1 hour until golden and fragrant.

Roast the Base

Pour in ½ cup Chardonnay and 7 cups chicken stock.

Return to oven and roast another 45 minutes.

Add Liquid & Finish Roasting

Remove turkey wings (serve them for dinner — they’re delicious!).

Strain everything through a large colander into a stock pot.

Use a potato masher to press the vegetables and extract all the juices.

This yields about 10 cups of liquid gold turkey broth.

Strain the Broth

In a large skillet, melt the butter over medium heat.

Add diced onion and a pinch of salt and pepper; sauté until translucent.

Add minced garlic and cook 2 minutes.

Whisk in the flour and cook until smooth and light golden.

Slowly pour in 2 cups broth while whisking constantly until thick.

Add another 2 cups broth and bring to a gentle boil.

Let boil for about 3–5 minutes until it starts to gloss up, then reduce to a low simmer.
