This easy lemony herb Couscous salad is full of fresh veggies, dried fruits &amp; greens. One bowl and only 10 minutes to make. It’s simple and healthy. All ingredients from Aldi!

Easy Lemony Herb Couscous Salad Recipe

couscous

vegetable stock

g sultanas

g cranberries

pumpkin seeds (toasted)

cucumber (sliced)

avocado (cubed)

sweet corn (drained)

feta (cubed)

rocket leaves

For the dressing

75 ml fresh squeezed lemon juice

honey

garlic

mint

basil

To make the dressing, place all the of ingredients in a jar with a tight-fitting lid and shake well. Set aside while you make the rest of the salad.

Weigh the dried couscous into a bowl. Set aside while you boil the kettle. Pour the water into a jug with your stock cube. Let the stock cube dissolve and pour the stock over the couscous and stir. Cover with cling film and let stand for about 10 minutes. Uncover the couscous and fluff with a fork.

Pour the dressing over the warm couscous and toss well. You may not need all the dressing so add as much or as little as you like.

To toast pumpkin seeds quickly and easily, just heat up a dry non-stick skillet and add in the pumpkin seeds. Be sure that the heat isn't up too high (somewhere around medium is perfect) because they'll burn quite easily. Also, be careful, because as pumpkin seeds toast, they start to pop and jump out of the pan.

Add the pumpkin seeds and all of the toppings into the salad. Toss well and serve.

Hawaiian Haystacks

chicken breasts,

unsalted butter

chicken broth

half and half

cornstarch

tbsp rice vinegar or lemon juice

parsley

salt and pepper

cheese

celery,

broccoli

red or green peppers, chopped

3.8 oz can olives (or 15 oz can olives chopped)

grape tomatoes (or 3-4 Roma tomatoes chopped)

pineapple

almonds

6-8 oz package spinach

15 oz can mandarin oranges, drained well

raisins

coconut

chow mein noodles, dried

In a large skillet, melt butter over medium heat.

Add chicken broth and half and half.&nbsp;

Combine cornstarch and water in measuring cup, mix until smooth.&nbsp;

Add cornstarch slurry to the skillet. Heat, stirring until thickened.&nbsp;

Add chicken, vinegar, parsley, salt and pepper - heat through.&nbsp;

Serve with cooked brown or white rice and toppings in individual bowls.&nbsp;

Deliciously refreshing, gravy is scrumptious, especially the next day with that marination.

Thank you so much for making an alternative for canned soup!!!! Once I see canned soup as an ingredient I lose interest and close out. There is nothing I dislike more than canned soup. This is one of my ultimate childhood throwback recipes! And infinitely better, because this sauce is absolutely delicious. For me, it’s that special hit of acidity with the lemon juice that makes this shine! This is always a winner with the whole family.

This is my new favorite chicken haystacks recipe! It makes a lot so you’ll have leftovers or it would be great for a gathering/party. I always love how the toppings and can be customized for my picky kids ha ha.

The sauce is so easy and comes together beautifully! Never using canned cream or chicken again!! We added a bit a Greek yogurt at the end and loved it too!
