Malaysian Chicken Curry

Add the oil to a big pot and...

Add the oil to a big pot and heat it up until hot. Add the onions and stir-fry until aromatic before adding the curry powder. Do a few quick stirs until you smell the aroma, then add the chicken, stir to combine well, for about 1 minute. Add the water into the pot and bring it to boil. Lower the heat and add the tomatoes, potatoes and eggs. Cover the pot and let simmer for about 30-45 minutes, or until chicken becomes tender. Add the coconut milk and salt to taste and simmer for another 5 minutes or so. Dish out and serve immediately with steamed rice.

Easy One-Pot Malaysian Chicken Curry

lb skinless boneless chicken thighs (diced)

shallot (finely minced)

ginger (minced)

garlic (minced)

red bell pepper (diced)

peas peas

onion

potatoes

chicken stock (or vegetable stock)

coconut milk (full fat)

tbsp vegetable oil (or any neutral oil)

bay leaves

tsp salt

tsp coriander

tsp chili powder

fennel seeds

turmeric powder

cinnamon powder

nutmeg

tsp black pepper

cloves

star anise

In a small bowl, combine the ingredients for your curry powder mixture. Set aside.

In a large pot set over medium heat, heat oil. Add shallot, garlic and ginger, and the curry power mixture. Stir to fry until everything is combined well.

Add sliced chicken and mix in with spices. Allow this to cook for 1 minute.

Pour in chicken stock, followed by bell peppers, snap peas, potatoes and bay leaves. Stir into broth. Cover and boil for 3 minutes.

Stir in coconut milk. Bring this to a boil and then reduce to a rolling simmer. Simmer for 30 minutes until the sauce has reduced by half and is thick.

Toss in green onions and mix. Serve with rice and enjoy!

This curry made my family and I feel like we were in Malaysia even though we’ve never been! So perfectly aromatic and the sweet/spicy flavors could not have complemented one another better. Mmm curry is THE BEST!! We just bought this ULTRA spicy thai pepper mix (apparently 20x hotter than jalapeno) and I am tempted to make this and add in some of that spice!

Easy Malaysian Chicken Curry

Kari ayam is a great way to mix up your curry repertoire. It&#x27;s kind of like Indian but not really. What it is is sure to please.

potatoes (coarsely chopped (yukon gold works well))

curry leaves

tbsp fish sauce

coconut milk

tbsp neutral oil ((e.g. vegetable or corn oil))

shallots

garlic

ginger root

tbsp malaysian curry powder

0-2 tsp kashmiri chili powder (depending

Combine the shallots, ginger, garlic, Malaysian curry powder, kashmiri chili powder and oil in a blender.

Add a couple tablespoons of water. Puree. If it won&#x27;t go add more water a tablespoon at a time until it does. In my blender it takes around 5 tablespoons of water. Every blender is different.

Make the curry paste

Cook the potatoes in salted water until just barely done. They will cook a little longer in the curry. Reserve one cup of the cooking water. Set the potatoes aside.

Cook your potatoes

Heat the remaining 4 tablespoons of oil in a pot large enough to hold the final curry over medium low heat. When the oil is hot add the cinnamon and star anise. Let cook for 15-20 seconds.

Add the curry paste. Cook the curry paste, stirring occasionally, until the oil separates. Cook another two or three minutes after that. This should take about 10 minutes total. You don&#x27;t want to skip this. Frying the paste cooks the raw spice flavour out. Smooths the flavours out.

Add the chicken and stir to combine. Cook for a minute or two. You aren&#x27;t trying to brown the chicken here.

Add 1/2 cup of the reserved potato cooking water. Stir, scraping up any bits on the bottom until it&#x27;s pretty well combined.

Add the coconut milk, fish sauce and curry leaves. Stir to combine.

Slip in the lemongrass stalk and bring to a simmer. Cover. Cook for 20 minutes.

Add the potatoes. Stir to combine and simmer until the chicken is done. This takes another 10-15 minutes.

Serve with jasmine rice and a flat bread like roti or parathas.
