Nonstick baking spray,

yellow cake mix

(1 stick) salted butter, softened

vanilla extract

eggs

mandarin

cream cheese, softened

confectioners' sugar

heavy cream

can crushed pineapple, drained

For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.

Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.

For the topping: Cream together the cream cheese and confectioners' sugar in the bowl of a stand mixer fitted with a paddle attachment, 1 to 2 minutes. Remove the mixture to a small bowl. Add the cream and vanilla to the stand mixer bowl and switch to the whisk attachment, then whip until soft peaks form, about 2 minutes. Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.

Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.

I am NOT a baker but somehow pulled this one off for picky sweet-eatin' husband and dinner with the In-laws!<div>And yes, Wineandfoodgirl you can totally leave out the pineapple and put in more mandarins.</div>

Family loved it! It was a wonderful mother's day dessert! I may add some shredded coconut to the icing next time to bring out a bit more of the tropical flavors. 

This is so easy to make and so incredibly good. A true crowd pleaser and even looks a little fancy. Have made it several times already. My new favorite!!!

Could not find 18.5 cake mix.  took advice from other comments.  Added 5 TBSP flour, 2 TBSP sugar, 1/2 tsp baking powder and pinch of soda.  Only used 15oz can mandarin oranges.  And I had to bake 35-39 minutes.  Thanks for a great recipe!

this was really good. I made as is, other than adjusting for having a smaller cake mix (added 5 tbl flour, 2 tbl sugar, 1/2 tsp baking powder, pinch of baking soda, which I saw when I googled it). Only thing was I had to cook cake for about 35 minutes instead of the 29. Will definitely make again

This cake was great to make and take to work.  I made it 2 days in advance and it kept very well in the refrigerator.  My box cake mix was only 15 oz. so I added an extra 3 oz. of flour.  Thanks Ree!

Very good for church potluck!! I think next time I’ll whip the cream with cream cheese for about 2 min and keep watch. I think my icing was trying to break at 3 min.

I enjoyed making this. The crispy ramen was the best part. I don’t know where to add the seasoning packets either? I just discarded them. You don’t need to add it anyway too much sodium in those seasoning packets. The dressing was perfectly balanced and the cabbage give it the perfect crunch

Molly’s family goes hard (eating food) at Thanksgiving, so they have to have an epic dessert. This is loosely inspired by a combination of don tot, Chinese egg custard tarts, and the classic lemon meringue pie, but flavored with mandarin oranges, for subtle extra sweetness. Molly also likes to use a shortbread crust to make the pie extra buttery and indulgent for the holiday.

Mandarin Meringue Pie

(200 grams) shortbread cookies,

(25 grams) sugar

kosher salt

unsalted butter, melted and cooled

mandarin orange zest mandarin orange juice

(100 grams) sugar

eggs egg yolk

evaporated milk

salt

cream of tartar

Arrange oven racks in both the upper third and lower third of the oven. Preheat the oven to 350 degrees F.

For the crust: In the bowl of a food processor fitted with the blade attachment, add the cookies, sugar and salt. Process to make fine, even crumbs (but not a paste). Pour in the melted butter and pulse until thoroughly combined.

Transfer the crust to a 9-inch pie plate (see Cook's Note) and press to compact and coat the bottom and sides. Bake until the crust is set, 10 to 12 minutes. Remove to a cooling rack.

Decrease the oven temperature to 325 degrees F.

For the custard: In a small saucepan over low heat, combine the orange zest and juice and sugar. Cook, stirring occasionally, until the sugar is fully dissolved. Let cool slightly, about 10 minutes.

Thoroughly whisk the whole eggs and yolk, evaporated milk, vanilla and salt in a large bowl (or large spouted measuring cup, which will make it easier to pour into the crust later). Whisk in the cooled orange juice mixture.

Put the crust on a baking sheet and place on the bottom rack of the oven. Pour the custard in while the pie plate is on the rack to avoid spills. Bake until the custard is just set but the very center is still just a bit jiggly, 25 to 30 minutes. Remove to a rack to cool completely. (The pie could be made a day ahead and chilled before topping.)

For the meringue: Once the pie has cooled, preheat the oven to broil.

Bring a medium saucepan with about an inch of water to a simmer over low heat. Into a large mixing bowl, whisk together the egg whites, sugar, cream of tartar and salt. Set the bowl over the simmering water and whisk until light and foamy and the mixture reads 135 degrees F on an instant-read thermometer. (The mixture should no longer be grainy if you rub it between your fingers and will be very warm/almost hot to the touch.)

Transfer the egg mixture to the bowl of a stand mixer fitted with the whisk attachment. Whisk on medium speed until the mixture begins to cool and forms soft peaks, 1 to 2 minutes. Increase the speed to medium high and whisk until the meringue just forms medium-stiff peaks (don’t overwhip), 1 to 2 minutes more.

Spread the mixture over the pie and make swoops and peaks with the back of a spoon. Broil in the oven for 1 to 2 minutes (watching carefully so as to not to let it burn) until golden brown and toasty. (Alternatively, you can use a brulee torch to toast the meringue.) Set aside to cool.

The meringue will be the best the day it is made, but leftovers will keep in the fridge for up to 2 days, though the meringue may weep a bit.

Chinese Chicken Salad

low-sodium soy sauce, divided

sesame oil, divided

chicken breasts

head napa cabbage, thinly shredded (about 6 cups)

red cabbage, shredded (about 2 cups)

carrot, shredded (about 2 cups)

scallions,

water chestnuts

Mandarin oranges

rice wine vinegar

garlic

ginger

canola oil

brown sugar

chili-garlic sauce or chili sauce

almonds,

Combine 1 tablespoon soy sauce and 1/2 teaspoon sesame oil and brush onto chicken breasts. Arrange in a baking dish and bake until juices run clear, about 13 to15 minutes. Remove from oven, cool completely, and cut into 1/4-inch slices. 

In a large bowl, combine Napa cabbage, red cabbage, carrot, scallions, water chestnuts, Mandarin orange and sliced chicken. In a separate bowl, whisk together 3 tablespoons soy sauce, vinegar, garlic, ginger, oil, 1 1/2 teaspoons sesame oil, brown sugar and chili sauce. Pour dressing over salad and toss to combine. Divide among bowls and top each serving with 2 teaspoons toasted almonds.

Way too much rice wine vinegar and sugar. I made it again with only 1 tbsp rice vinegar and 1 tsp sugar - much better. Added more soy sauce and sesame oil to stretch the dressing. Important: add sesame oil instead of canola oil.

I normally really like Ellie’s recipes but everything about this was a bust for me, especially the dressing. Oh well, you can’t win them all but I’m obviously in the minority.

Healthy Chinese Chicken Salad

Remember this classic? You might be surprised at how it satisfies a modern palate, even as it gives a retro wink to the last century.

Ambrosia Salad

pecans

sour cream

mini marshmallows

pineapple (1/2-inch dice)

coconut

mandarin oranges

maraschino

Position an oven rack in the center of the oven and preheat to 350 degrees F.

Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely. 

Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight. 

Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

Made it with cool whip. Very good and easy. .

Has become a new Holiday staple for my family! Love it!

We add 2 boxes of chocolate covered cherries (Queen Anne’s) finger crushed.  Another trick grandma taught us was to mix everything together except the whipped cream-sour cream mix until about an hour before serving.
