Tofu Thai Panang curry with mixed peppers and mangetout

tbsp Coconut oil

35 g Mae Jum Panang Curry Paste

1.5 tbsp Soya Sauce (light)

tbsp Palm Sugar

400 ml Coconut milk

300 g Tofu (extra firm)

Sweet Peppers

g Mangetout

Kaffir Lime Leaves

Thai basil

water (optional)

Trim the ends of mangetout

Roughly dice the pepper

Cut tofu into 1cm cubes

Thinly slice kaffir lime leaves

Preparation

Heat coconut oil in a saucepan over medium/high heat, and fry tofu until golden brown

Remove tofu from the saucepan and leave to rest on some kitchen tissue. Fry curry paste in the remaining oil on medium heat to build aroma

Add 100ml of coconut milk to loosen the paste and season with soya sauce and palm sugar, blend well

Add the remaining coconut milk with the mixed peppers and simmer for 5 mins

Add mangetout and water if desired, cook for a couple of minutes before adding in the fried tofu. Simmer for 5 minutes

Turn heat off and mix in kaffir lime leaves and sweet Thai basil before serving with freshly made Thai Jasmine rice. Enjoy!

100ml water (optional for a thinner sauce)

Tofu Thai Panang Curry with Mixed Vegetables

This speedy veggie stir-fry is super easy to make, packed with vegetables and full of flavour. 

Each serving provides 103kcal, 3g protein, 7g carbohydrate (of which 7g sugars), 6g fat (of which 0.7g saturates), 3.5g fibre and 1.4g salt.

Easy vegetable stir-fry

sunflower oil

spring onions,

garlic clove, crushed

fresh root ginger,

carrot,

red pepper,

grams/3½oz baby sweetcorn, halved

courgette,

150 grams/5½oz sugar-snap peas

hoisin sauce

tbsp low-salt soy sauce

Thai satay stir-fry

peanut butter

tbsp sweet chilli sauce

soy sauce

pack straight-to-wok noodle

tbsp oil

root

pack stir-fry vegetable with peppers

basil leaves

Mix the peanut butter, chilli sauce, 100ml water and soy sauce to make a smooth satay sauce. Put the noodles in a bowl and pour boiling water over them. Stir gently to separate, then drain thoroughly.

Heat the oil in a wok, then stir-fry the ginger and harder pieces of veg from the stir-fry mix, such as peppers, for 2 mins. Add the noodles and rest of the veg, then stir-fry over a high heat for 1-2 mins until the veg are just cooked.

Push the veg to one side of the pan, then pour the peanut sauce into the other side, tilting the pan. Bring to the boil. Mix the sauce with the stir-fry, then sprinkle over the basil leaves and peanuts to serve.
