Slice each side just parallel to the seed, with the stem facing upwards.

How to Cut Mangos into Cubes

Instead of slicing the mango in cubes before you remove it from the skin, try this:
Using a hard plastic cup with a skinny rim, slide the rim of the cup into the half mango, starting with the narrow end and move it all the way through, being careful not to pierce the skin.  Once you have separated the fruit from the skin, you can cut it into spears or cubes as you wish. 

Make sure The plastic cup is flexible enough to  bend but still firm enough to use as a knife.
