sweet potato ((about 2 large sweet potatoes))

brussels sprouts ((about 2 lbs))

Tbsp dijon mustard

olive oil

maple syrup

chicken breasts

avocado oil

poultry seasoning ((see blog post to compare ingredients of mine))

pecan halves

cranberries

Preheat oven to 400F.

Add mustard, olive oil and maple syrup to a large bowl and whisk together until well combined.

Add sliced onion, cubed sweet potato, and halved brussels sprouts to the bowl and toss until every piece of vegetable is covered in sauce from all sides.

Place vegetables evenly in one layer onto a large baking sheet and roast for approximately 25 minutes stirring 2 or 3 times in between to avoid burning.

Right after adding the vegetables to the oven, place 2 chicken breasts on a separate baking sheet, drizzle with a little oil and season generously with poultry seasoning. Then add to the oven with the vegetables for about 20 minutes or until the chicken reaches an internal temperature of 165F.

Remove everything from the oven and stir pecan halves and dried cranberries into the roasted vegetables.

Divide all ingredients amongst 4 meal prep bowls and store in the fridge for up to 4 days.

Maple Dijon Chicken with Roasted Fall Vegetables

bone in, skin on chicken thighs

butternut squash

halfed brussel sprouts

apples

dijon mustard

salt and pepper

Preheat oven to 400 degrees fahrenheit. Spray sheet pan with nonstick spray.

In a small bowl (but large enough for a chicken thigh) mix maple dijon sauce ingredients.&nbsp;

Fully coat each chicken thigh in bowl.&nbsp;

Place fully coated chicken thighs on sheet pan. Sprinkle veggies towards the middle, but not on top of the chicken (keeping veggies and apples away from &nbsp;edges of pan as some of the maple/dijon mixture will darken).

Sprinkle entirety of pan, coating chicken and veggies/apples with salt and pepper.

Bake for 45-50 minutes, or until chicken reaches internal temperature of 165 degrees. If you find your meal getting roasted beyond your liking, add a piece of foil on top.&nbsp;

boneless, skinless chicken thighs (about 1-1/2 pounds)

Salt

Black Pepper

McCormick Grill Mates Smokehouse Maple seasoning (optional)

Dijon mustard

rosemary

instant (granulated) tapioca (for thickening)

soy sauce

garlic, minced (or 1/4 teaspoon garlic powder)

Ideal slow cooker size: 3- to 4-Quart.

Grease the inside of the slow cooker.

Trim the chicken thighs of any excess fat and season well with salt and pepper and SmokeHouse maple seasoning, if using.

Place the chicken in the slow cooker.

In a medium bowl, whisk together the mustard, maple syrup, rosemary, tapioca, soy sauce and garlic. Pour over the chicken.

Cover and cook on LOW for 4 to 6 hours, or until the chicken is tender.
