This easy marinated artichoke salad with canned artichoke hearts, tomatoes, feta, herbs, and an easy homemade dressing is simple, fresh and delicious! (vegetarian, gluten-free)

Marinated Artichoke Salad with Tomatoes and Feta

(15 oz) can artichoke heart quarters, drained

cherry tomatoes

garlic

tsp sea salt

lemon

tbsp red wine vinegar

tbsp extra virgin olive oil

basil

oregano

black pepper

feta cheese

In a small bowl, use a fork to mash garlic clove with salt until a paste is formed. Whisk in lemon juice, vinegar and olive oil.

Place artichoke hearts in a bowl with tomatoes. Pour vinaigrette over tomatoes and artichokes. Add basil and oregano. Season with pepper to taste. Add feta and gently stir to coat.

Place salad in the refrigerator, covered, to marinate for 2-3 hours before serving, stirring occasionally.

I made this recipe and it was absolutely delicious.  I will make it again.  My husband loved it.  I did use fresh artichokes from the market though but that was the ONLY change i made.  Thank you.

This salad was perfect!  I love artichokes and this was the delicious side salad to baked cod.  This is definitely a keeper!!
