Marinated Butter Beans and Cottage Cheese

oz cottage cheese

Tablespoons tahini

yogurt

feta

water (for thinning)

butter beans

olive oil

salt

chives

paprika

oregano

Combine

In a blender or food processor, combine the cottage cheese, tahini, yogurt, and crumbled feta.

Blend

If the dip is too thick, add 2 tablespoons of water and blend again until the desired consistency is achieved. Add more water if needed.

In a separate bowl, mix the drained butter beans with 4 tablespoons of olive oil, 1/2 teaspoon of salt, chopped chives, paprika, oregano and the additional 1/2 teaspoon of butter beans. Toss everything together until well coated. Set aside for at least 30 minutes.
