These are flavorful and tender oven baked chicken thighs that can be cooked on the grill or in the oven.

Oven Baked Marinated Chicken Thighs

olive oil

soy sauce

Worcestershire sauce

red wine vinegar

lemon juice

dry mustard

black pepper

6-8 boneless skinless chicken thighs

Whisk together everything except the chicken for the marinade. Place the chicken into a gallon size ziploc bag and then pour the marinade over it. Place in the refrigerator and let it marinate for 24 hours. Turn the bag over a couple times throughout the day, to ensure that everything is covered in marinade.

When you are ready to cook the chicken, preheat the oven to 350 degrees. Line a large baking sheet with foil and then place the chicken thighs on the foil. Bake for 25-35 minutes, checking every few minutes after 25. Chicken thighs will not turn white, so determine whether it is done cooking by when the juices are clear. Enjoy!

Peruvian Chicken with Green Sauce

lbs boneless skinless chicken thighs

serrano pepper (seeds and stems removed)

cilantro

garlic clove

lime juice

Marinate

Add garlic, lime juice, paprika, oregano, salt, cumin, and 2 tbsp of the olive oil to a large plastic bag. Add the chicken. Zip it up and massage the marinade into the chicken. Marinate for 1 hour.

Make

While the chicken marinates, make the green sauce.

Blend

Add serrano pepper, cilantro, garlic, lime juice, honey, olive oil, Greek yogurt and salt to a high-powered blender or food processor. Blend until smooth. If needed, add a tablespoon or two to thin the sauce out. Season with salt and pepper and set aside.

Cook

Once the chicken has marinated, heat a large skillet to a medium-high heat. Add remaining 2 tablespoons of olive oil. Using tongs, pull the chicken out of the marinade. Let any excess marinade drip off. When the oil is hot, add the chicken to the skillet. If needed, work in batches as you don’t want to overcrowd the skillet. Sear the chicken until crusty and grown, about 4-5 minutes. When the chicken is ready to flip, it should easily release from the pan. Flip over and do the same on the other side until cooked through, about another 3-4 minutes.  The chicken is done when it reaches 165 degrees on an instant-read thermometer.

Pour

Remove the chicken from the skillet on to a platter. Turn the heat on low and add the water to the empty skillet. Use a wooden spoon to scrape up all the bits at the bottom of the pan. Pour over the chicken.

Serve

Serve chicken with green sauce and rice if desired.

Add the paprika, thyme, parsley, onion granules, brown sugar, black pepper, garlic powder, salt, soy sauce, lemon juice, and olive oil into a bowl. Mix till well combined.

Pat the chicken thighs dry with paper towels then add them into a bowl.

Add the marinade to the chicken thighs and rub the marinade all over the chicken making sure that they are all coated in the marinade. Cover the bowl with clingfilm, and put it in the fridge for the chicken thighs to marinate for 60 minutes up to 12 hours.

Bring out the chicken thighs and arrange them on a baking tray.Put the tray in the oven and bakechicken thighs at a temperature of 200C/400F for 45 minutes or untill cooked.

You can broil for 3 minutes to crisp the top.

When cooked, bring them out of the oven, let them rest for a few minutes before serving.
