sweet corn

tbsp carrot (chopped)

tbsp capsicum (chopped)

pasta boiled water

tomato sauce

tsp herbs

tsp chilli flakes

cheese (grated)

coriander (finely chopped)

firstly, in a large vessel take 2 litre water and 1 tbsp salt.

get the water to a rolling boil. once the water comes to a boil, add 2 cup pasta.

boil for 7 minutes or until the pasta is al dente. make sure to check the cooking time on package instructions.

drain off the pasta and rinse with cold water to stop from cooking further. keep aside.

to prepare pasta sauce, in a large wok heat 2 tbsp olive oil and 1 tbsp butter.

add 2 clove garlic, 1 chilli and 1 inch ginger. saute slightly.

also, saute ½ onion until the onions shrink slightly.

keeping the flame on low, add 1 tsp chilli powder and ½ tsp turmeric.

saute on low flame until the spices turn aromatic.

further, add 2 cup tomato puree and cook well.

cook until the mixture thickens and oil separates.

also add ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala and ½ tsp salt.

add 2 tbsp sweet corn, 2 tbsp carrot and 2 tbsp capsicum. cook for a minute.

now add ½ cup pasta boiled water, 2 tbsp tomato sauce, 1 tsp mixed herbs and 1 tsp chilli flakes.

cook until the spices are well combined.

further, add ½ cup cheese and mix well. cheesy pasta sauce is ready.

now add boiled pasta and mix well making sure the pasta sauce is well combined with pasta.

finally, enjoy desi masala pasta topped with cheese and coriander.

This is an easy, simple and super sumptuous way of preparing a vegetarian pasta dish, in an Indian style. The masala is just like any other spiced onion-tomato mixture that goes in an Indian dish.

Masala Pasta Recipe | Easy Indian Style Pasta Recipe

penne pasta ((heaped) - 100 grams)

salt (or add as required)

spring onions (or onions)

½ teaspoon Ginger Garlic Paste

tomatoes

turmeric powder

black pepper powder

kashmiri red chili powder

Coriander Powder

carrots

green peas (- fresh or frozen)

capsicum

water (or add as required)

coriander leaves

spring onions greens (- optional)

¼ teaspoon Garam Masala

salt (as required)

Heat 4 cups water along with ½ teaspoon salt till it comes to a boil.

When the water comes to a boil, add the pasta.

Cook till the pasta becomes aldente. You can also cook it more if you want.

Strain the pasta and keep aside.

Cooking pasta

Heat 2 tablespoons oil in a pan. Add the finely chopped spring onions or onions. 

Saute till the onions become translucent.

Then add ginger-garlic paste.&nbsp;Saute till the raw aroma of ginger-garlic goes away.

Then add 1 cup tightly packed finely chopped tomatoes.

Stir and sauté on a low to medium heat till the tomatoes become pulpy and soften.

Then add all the ground spice powders one by one. 

Mix the spice powders very well.

Next add the mix veggies.

Season with salt.&nbsp;Mix very well and saute for a minute.

Add water. Mix again. Cover the pan with its lid. On a low to medium heat simmer till the veggies are tender and cooked.

When the veggies are done, add the cooked pasta. Mix very well. 

Next add 2 tablespoons chopped coriander leaves and 2 tablespoons chopped spring onions greens - optional.

Then add garam masala powder. Mix well. Switch off the heat.

Serve Indian Pasta hot or warm garnished with some coriander leaves or some grated cheddar cheese or vegetarian parmesan cheese.
