Sweet carrot purée

<p>Melt the butter in a large frying pan and cook the onions and sugar together for 20-30 mins, stirring from time to time, until very soft and dark golden.</p>

<p>Meanwhile, boil or steam the carrots for 15-20 mins until very tender. Drain well and return to the pan. Add the caramelised onions and using a hand blender, whizz to make a smooth purée. Stir in the parsley and serve.</p>

Creamy, plant-based mashed carrots spiced with cinnamon, nutmeg, and sweetened with brown sugar. The perfect, wholesome side dish for the fall season, holidays, or just to flavor-up a dinner meal.

Mashed Carrots With Cinnamon and Brown Sugar

carrots (scrubbed + wash, pat-dry)

olive oil

salt

vegan butter

brown sugar ((about 4 tablespoons, loosley packed))

nutmeg

cinnamon

full-fat coconut milk

Parsley (optional, to garnish)

Preheat the oven to 425 degrees F. Cut off the carrot tops and slice carrots in half, lengthwise. Toss carrots in olive oil and salt.

Place carrots onto a baking sheet lined with parchment paper. Roast for 25-30 minutes, until all carrots are fork-tender. Some pieces might take longer than others if they vary in thickness.

Transfer carrots into a blender or food processor. Add butter, brown sugar, nutmeg, cinnamon, and coconut milk. Stir together. Blend/process until smooth. Serve with parsley and additional butter (optional).

Mashed carrots make a light side dish that´s a great alternative to mashed potatoes. Less calorie-rich but sweet, spiced, and so flavorful.

(85 grams) butter

lemon juice

maple syrup

paprika

ginger

cayenne pepper

(30 grams) butter

chopped parley

cheese

Peel the carrots, cut off the ends, and cut into slices. Steam for about 20 minutes or until soft (you can use a steamer basket or just a colander that you will cover with a well-fitted lid).

Drain the carrots and transfer to a large bowl. Add all the other ingredients.

Puree the carrots with a mixer/food processor until smooth. Season to taste with salt and pepper.

Transfer to a bowl and smooth out the surface with the back of a spoon.

Make brown butter: add 2 tablespoons of butter to a small pot and cook over medium heat for a couple minutes until it's melted, light brown in color, and smells nutty. Spoon it over mashed carrots.

Sprinkle lightly with chopped parsley and parmesan cheese.
