Inspired by Alvin Zhou&#039;s 100-Hour Fudgy Brownies, this green tea spin results in the moistest and gooiest Matcha Brownies you&#039;ll ever have!

100-Hour Fudgy Matcha Brownies

unsalted butter

eggs

vanilla paste

chocolate powder ((one

45 g / 8 oz matcha powder

all-purpose flour

sugar ((or to taste))

salt ((use kosher if available))

100 g / 3 1/2 oz white chocolate

225 g / 8 oz matcha chocolate ((to be melted))

Melt the unsalted butter on a low heat for 5 minutes or until it becomes brown butter and turn off the heat.

Add the white chocolate powder and stir until dissolved.

Put the white chocolate ice cubes into the mixture and stir until melted, then set aside for later.

In a large bowl, whisk together the eggs, vanilla paste and sugar until it becomes fluffy.

Sift in the matcha powder, white chocolate powder and salt into the egg mixture, then fold in until well incorporated.

Pour in the brown butter and mix well.

Melt the green tea chocolate in a heatproof bowl over a pot of simmering water on low heat, then add the melted chocolate into the batter and stir to combine.

Sift in the flour and fold in until mixed.

Roughly chop the remaining green tea chocolate bars and stir into the batter.

Line a 23 x 33 cm (9 x 13”) with baking paper, then smooth the batter out until it covers the entire tray.

Top the uncooked batter with white chocolate and cover with glad wrap.

Cover the uncooked brownies with glad wrap and refrigerate for 3 days.

Day 1

Preheat the oven to 180°C (350°F). Take the batter out of the fridge and bake for 30 minutes.Note: Keep it on the middle or bottom oven rack because the white chocolate can burn easily.

Tightly cover the tray with foil and put the cooked batter into the freezer while it’s still hot for 30 minutes, then transfer it to the fridge for another 24 hours.

Day 4

Preheat the oven to 180°C (350°F). Remove the tray from the fridge and take the brownie out.

Trim the edges away to make it neat and even.Tip: Dip the knife in hot water with each cut to make it a cleaner slice. Also, if you have trouble taking the brownie out, run a small knife along the edges to loosen it from the baking tray.

Divide the brownie into 9 pieces, or to preference.

Heat the Matcha Brownies up for 3 minutes or until warm. Serve immediately as is!

Day 5

A yummy and easy recipe for brown butter matcha brownies.

Brown Butter Matcha Brownies

unsalted butter (browned)

oz white chocolate

matcha powder

sugar

brown sugar

eggs (room temperature)

tsp vanilla extract

salt

all purpose flour

salt (optional)

Preheat the oven to 350 degrees F.

Grease a 8x8 baking pan with butter and line with parchment paper. Set aside.

Heat the butter over high heat until it melts. Lower the heat to low. Heat the butter until small brown bits start to appear. Remove from the stove.

Add white chocolate and matcha powder to a small bowl. Pour the brown butter over the top and stir until all the chocolate melts. Let the mixture cool for 2 minutes.

In large bowl, combine granulated sugar, brown sugar, eggs, vanilla extract, and salt. Beat with a hand mixer or stand mixer until thick and creamy (5-10 minutes). 

While mixing, stream in your matcha chocolate ganache from step 4. Whisk until a uniform green batter appears.

Lastly, sift your flour into the bowl. Using a spatula, gently fold the flour into the batter using a until a green batter forms.

Spoon into your prepared baking pan.

Bake for 20-30 minutes.

Take out the brownies and slam them on the counter to get rid of some the air. Sprinkle some flaky sea salt over the top and put the brownies back in the oven. Bake for another 10 minutes.

Let cool for 20 minutes before serving.

An easy recipe for baked matcha green tea mochi brownie (brochi). Slightly chewy and full of flavour.

Matcha Brownie Mochi (Brochi)

C mochiko (glutinous rice flour)

sugar (decrease to 1/3 C if you prefer it less sweet)

tsp baking powder

oil oil

coconut milk (or whole milk)

Tbsp matcha

sea salt

Preheat oven to 350°F.

Line 8&quot; x 8&quot; square baking pan with parchment paper. (You can use either glass or metal).

In a large bowl, combine mochiko flour, sugar, baking powder, salt. Sift in matcha powder. Whisk all the dry ingredients to combine.

In medium glass bowl, whisk together the egg, oil, and milk.

Pour the wet ingredients over top the dry ingredients.

Use a spatula and mix until everything is combined and there are no lumps.

Pour the batter into the prepared pan.

Tap the pan a few times gently to release any bubbles.

Place in the centre of the oven and bake at 350°F for 35-40 minutes, or until a toothpick inserted comes out clean.

Remove, and let cool on a wire rack.

Slice into 16 small squares. Dust with additional matcha powder.

Best enjoyed freshly made. Keep at room temperature in an airtight container for up to 2 days. Do not refrigerate.

How to make rich and fudgy Dark Chocolate and Matcha Brownies

Delicious Fudgy Dark Chocolate and Matcha Brownies (ダークチョコレート抹茶ブラウニー)

dark chocolate (70% cacao)

granulated sugar

light brown sugar

plain weak flour

tbsp matcha powder (plus 1 tsp for sprinkling)

18x18cm square baking tin (see note)

Baking paper

Preheat your oven to 170-180°C (approx 340-355°F).

Break up 120g of dark chocolate into a microwavable bowl with 100g of cubed unsalted butter.

Heat the butter and chocolate for 30 seconds in the microwave, and mix.

Return the bowl to the microwave for 20 second intervals, mixing with a silicone spatula each time. Keep doing this until the chocolate and butter are completely melted.

Whisk in the granulated and brown sugar until smooth and leave to cool down for 5 mins.

While you're waiting for the mixture to cool, line your baking tin with baking paper. The baking parchment should be bigger than the tin, coming over the edges for easy removal at the end.

In a separate bowl add 50g flour, 2 tablespoons of matcha powder and a pinch of salt. Mix them together and set aside for now.

By now, your chocolate, butter and sugar mix should be slightly cooled. Add your eggs to the chocolate mixture one by one, whisking in between.

Add 1 tsp of vanilla extract and whisk one more time.

Sift your dry ingredients into the wet ingredients and then fold them in using a spatula.

Once well incorporated, pour the mixture into the baking tin. It should be a thick batter.

Bake on the middle shelf for around 23-25 mins, then check every 2-3 mins after that to see if it's cooked. You can test it by piercing the middle with a toothpick, if it comes out with wet batter, it's not ready. But if it comes out with some moist crumbs, it's done! (It doesn't need to be completely clean)

Take it out and leave to cool. Once cooled, you can cut them into 9 or 12 pieces and dust them with 1 tsp of matcha powder.
