Preheat the oven to 425 degrees. Toss the chicken pieces with the spices and a quick stream of olive oil. Stir to combine; store in the fridge for about 30 minutes while you prep other ingredients.

Arrange the vegetables on their own sheet pans (preferably ones with edges to catch drips, etc.). Drizzle with olive oil and sprinkle generously with salt. Arrange the chicken on a separate sheet pan.

Bake all ingredients for 12-15 minutes. Remove the broccoli and chicken. Stir sweet potatoes and roast another 15 minutes or so.

Love this :) I can feel your excitement and I am forever trying to find the balance in cooking for the blog vs. cooking for us in real life and trying new recipes and staying creative, yet making things that people will actually EAT and not just think are pretty. Spicy Chicken Meal Prep with rice and beans + a yummy cilantro sauce = healthy meal prep to last you all week! Meal planning that is healthy, delicious, AND beautiful!

Spicy Chicken Meal Prep with Rice and Beans

Place the rice, water, tomatoes, salt, and oil in the pot. Stir to combine. Place the chicken pieces on top and sprinkle generously with your favorite spices and some salt. Turn the instant pot on high pressure for 7-8 minutes. When done, use the quick release valve for the steam.

 Remove the chicken. Mix the black beans (and maybe a little sunshine sauce) in with the rice.

Meal Prep Yourself

Divide the rice and beans amongst 4-6 meal prep containers. Top each with a piece of chicken. Sprinkle with cilantro and drizzle with a spoonful of sauce.

I put a cupcake liner in the small compartment, that way you can just lift the liner with the trail mix (or whatever else) straight out befote microwaving.

Yum!! Would love to see more meal prep ideas. I find prepping essential to eating healthy with commuting, work, etc. However, I do have a question and it's kind of silly but driving me nuts (ha)..how do you heat up the meal on day 2, 3, 4 etc. with the granola and peppers in there? Do you dump them out onto a paper towel or something? Inquiring mind wants to know :)

How to meal prep chicken for the entire week, including an easy chicken breast recipe, all for under $5 per meal!&nbsp; Cook once and eat all week!

How To Meal Prep Chicken

chicken breasts

limes, (juiced (approx. 4 tbsp. juice))

tsp cumin

tsp sea salt

tsp black pepper

cayenne pepper

cilantro, (chopped)

coconut oil

tbsp raw honey

cinnamon

broccoli florets

garlic powder

In a large mixing bowl, add the boneless, skinless chicken breasts, lime juice, ground cumin, sea salt, black pepper, cayenne pepper, and fresh cilantro.  Toss this all together to coat evenly.  Then, top with plastic wrap and place in the fridge for at least 30 minutes to marinate. (You could also place everything in a large sealable bag if you&#x27;d prefer.)

While the chicken is marinating, start on the sweet potatoes by preheating your oven to 375 degrees F and lining a rimmed baking sheet with parchment paper.

In a large mixing bowl, combine the diced sweet potatoes, coconut oil, raw honey, sea salt, and ground cinnamon and toss to coat evenly.

Spread the sweet potatoes out evenly over the prepared baking sheet and, when the oven is preheated, place into the oven for 20-25 minutes, or until the sweet potatoes are tender when pierced with a fork.

To make our easy sautéed broccoli, heat olive oil over medium-high heat in a large skillet.

Once hot, add raw broccoli florets, followed by sea salt, garlic powder, and black pepper.  Toss to coat.

Cover the pan and cook 6-8 minutes, tossing regularly until the broccoli is almost tender and is bright green. (You can add a little low sodium chicken broth or water to help it along if you’d like.)

To cook the chicken, heat olive oil over medium-high heat in a large skillet and then transfer the cilantro lime marinated chicken into the hot pan, spaced evenly.

Cook 4-6 minutes per side, until well browned and fully cooked.

Remove from the heat and dice into cubes.

To assemble, I recommend using meal prep containers.  Start by adding the diced chicken, followed by the sautéed broccoli, and then the sweet potatoes.  Top everything off with a wedge of lime and you’re good to go.

1 tsp sea salt
1/2 tsp garlic powder

How to Meal Prep - Chicken (7 Meals/Under $5) | How To Meal Prep | A Sweet Pea Chef

This comforting Slow Cooker Chicken Breast recipe is made with a mouthwatering blend of herbs and spices. Guaranteed to turn out perfectly every time!

Slow Cooker Chicken Breast

oregano

chopped fresh parsley, (for garnish, optional)

Pour water or chicken broth inside the insert of your slow cooker.

Pat dry the chicken breasts with paper towels.

Rub the chicken with olive oil and set aside.

In a small mixing bowl combine the salt, black pepper, paprika, garlic powder, onion powder, basil, and oregano; mix until thoroughly incorporated.

Rub the chicken breasts with the seasoning mixture.

Transfer the chicken breasts to the slow cooker.

Cover and cook on LOW for 3 to 4 hours, or until internal temperature of the chicken registers at 165˚F. Use an Instant Read Meat Thermometer to check for doneness.

Remove chicken breasts from the slow cooker and let the chicken rest for about 5 to 8 minutes before cutting and serving.

If you’d like a bit of browning on the cooked chicken, put it under the broiler for about 3 to 4 minutes after you cooked it in the slow cooker.

Yes, you can make Instant Pot Shredded Chicken from Frozen chicken breasts. And, it&#039;s so easy. You get a bonus quart of golden chicken stock too!

Instant Pot Shredded Chicken from Frozen

Chicken Breasts (frozen)

Yellow Onion (sliced and circles separated)

Garlic Cloves

Water

Salt and Pepper (as desired)

Peel onion and make four horizontal slices then separate the onion circles into the Instant Pot. Add 3 garlic cloves to Instant Pot and add frozen chicken breasts.

Pour in water and season with salt and pepper, as desired.

Check the Instant Pot lid to ensure the seal is in place and nothing is blocking the vent. Place lid on top and set lever to Sealing. Press the Manual button on the Instant Pot and set to high for 18 minutes. Natural release for 10 minutes then quick release the remaining pressure. The entire cook time will be about 30-35 minutes.

Remove lid. Press the Cancel button to reset or remove cord. Check that the internal temperature is 165℉. If not, press the Saute button to cook a little longer, until done.

Remove the chicken to a cutting mat and shred with 2 forks right away. It shreds so easily that it takes only about 60-90 seconds. Strain the chicken stock, if desired. Don&#39;t throw it away!

Allow to cool then store in an airtight container in the refrigerator for up to 4 days or in a freezer safe container or freezer bag for up to 4 months.

Slow Cooker Greek Chicken made with simple ingredients and lends outstanding flavor. A fresh and healthy chicken recipe you&#39;ll want to make all the time!

Slow Cooker Greek Chicken

chicken breast

full-fat, plain Greek yogurt

garlic cloves, divided

Combine yogurt, 1 garlic clove grated, lemon zest, juice of lemon, and salt in a small bowl.

To a large slow cooker add chicken along with 1 garlic clove minced. Pour 1/3 cup of the yogurt sauce over the chicken and toss to coat both sides. Put remaining yogurt sauce in the refrigerator until ready to serve with cooked chicken.

Place the lid on and cook on high for 3-4 hours or low for 5-6. You want the chicken to easily shred with a fork.

Once chicken is cooked remove to a plate and shred. Pour out all but 1/4 cup of the cooking liquid and add chicken back to the slow cooker. Stir in 1/4 cup more yogurt sauce and serve chicken with fresh lemon slices and additional sauce. See notes below for how to serve Greek chicken.
