Preheat the oven to 425 degrees. Toss the chicken pieces with the spices and a quick stream of olive oil. Stir to combine; store in the fridge for about 30 minutes while you prep other ingredients.

Arrange the vegetables on their own sheet pans (preferably ones with edges to catch drips, etc.). Drizzle with olive oil and sprinkle generously with salt. Arrange the chicken on a separate sheet pan.

Bake all ingredients for 12-15 minutes. Remove the broccoli and chicken. Stir sweet potatoes and roast another 15 minutes or so.

Love this :) I can feel your excitement and I am forever trying to find the balance in cooking for the blog vs. cooking for us in real life and trying new recipes and staying creative, yet making things that people will actually EAT and not just think are pretty.  And this, my friend, is definitely both :)  Meal planning and I are having some words right now -_- but I will certainly be doing a version of this soon :)

It's like you read my mind.  I just "cleaning frenzied" my house and threw open every window.  The sun is shining, the birds are chirping, and I'm ready to drop my winter muffin top and squeeze back into my summer clothes! Spicy Chicken Meal Prep with rice and beans + a yummy cilantro sauce = healthy meal prep to last you all week! Meal planning that is healthy, delicious, AND beautiful!

Spicy Chicken Meal Prep with Rice and Beans

Cook

Place the rice, water, tomatoes, salt, and oil in the pot. Stir to combine. Place the chicken pieces on top and sprinkle generously with your favorite spices and some salt. Turn the instant pot on high pressure for 7-8 minutes. When done, use the quick release valve for the steam.

 Remove the chicken. Mix the black beans (and maybe a little sunshine sauce) in with the rice.

Meal Prep Yourself

Divide the rice and beans amongst 4-6 meal prep containers. Top each with a piece of chicken. Sprinkle with cilantro and drizzle with a spoonful of sauce.

I put a cupcake liner in the small compartment, that way you can just lift the liner with the trail mix (or whatever else) straight out befote microwaving.

Yum!! Would love to see more meal prep ideas. I find prepping essential to eating healthy with commuting, work, etc. However, I do have a question and it's kind of silly but driving me nuts (ha)..how do you heat up the meal on day 2, 3, 4 etc. with the granola and peppers in there? Do you dump them out onto a paper towel or something? Inquiring mind wants to know :)

How to meal prep chicken for the entire week, including an easy chicken breast recipe, all for under $5 per meal!&nbsp; Cook once and eat all week!

How To Meal Prep Chicken

chicken breasts

limes, (juiced (approx. 4 tbsp. juice))

tsp cumin

tsp sea salt

tsp black pepper

cayenne pepper

cilantro, (chopped)

coconut oil

tbsp raw honey

cinnamon

broccoli florets

garlic powder

In a large mixing bowl, add the boneless, skinless chicken breasts, lime juice, ground cumin, sea salt, black pepper, cayenne pepper, and fresh cilantro.  Toss this all together to coat evenly.  Then, top with plastic wrap and place in the fridge for at least 30 minutes to marinate. (You could also place everything in a large sealable bag if you&#x27;d prefer.)

While the chicken is marinating, start on the sweet potatoes by preheating your oven to 375 degrees F and lining a rimmed baking sheet with parchment paper.

In a large mixing bowl, combine the diced sweet potatoes, coconut oil, raw honey, sea salt, and ground cinnamon and toss to coat evenly.

Spread the sweet potatoes out evenly over the prepared baking sheet and, when the oven is preheated, place into the oven for 20-25 minutes, or until the sweet potatoes are tender when pierced with a fork.

To make our easy sautéed broccoli, heat olive oil over medium-high heat in a large skillet.

Once hot, add raw broccoli florets, followed by sea salt, garlic powder, and black pepper.  Toss to coat.

Cover the pan and cook 6-8 minutes, tossing regularly until the broccoli is almost tender and is bright green. (You can add a little low sodium chicken broth or water to help it along if you’d like.)

To cook the chicken, heat olive oil over medium-high heat in a large skillet and then transfer the cilantro lime marinated chicken into the hot pan, spaced evenly.

Cook 4-6 minutes per side, until well browned and fully cooked.

Remove from the heat and dice into cubes.

To assemble, I recommend using meal prep containers.  Start by adding the diced chicken, followed by the sautéed broccoli, and then the sweet potatoes.  Top everything off with a wedge of lime and you’re good to go.

3 1/2 lbs. boneless/skinless chicken breasts

6 medium sweet potatoes, diced into cubes
3 tbsp coconut oil, melted
3 tbsp raw honey
1 tsp sea salt

8 cups broccoli florets
2 tbsp olive oil
1 tsp sea salt
1/2 tsp garlic powder
1/4 tsp black pepper

How to Meal Prep - Chicken (7 Meals/Under $5) | How To Meal Prep | A Sweet Pea Chef

This comforting Slow Cooker Chicken Breast recipe is made with a mouthwatering blend of herbs and spices. Guaranteed to turn out perfectly every time!

Slow Cooker Chicken Breast

oregano

chopped fresh parsley, (for garnish, optional)

Pour water or chicken broth inside the insert of your slow cooker.

Pat dry the chicken breasts with paper towels.

Rub the chicken with olive oil and set aside.

In a small mixing bowl combine the salt, black pepper, paprika, garlic powder, onion powder, basil, and oregano; mix until thoroughly incorporated.

Rub the chicken breasts with the seasoning mixture.

Transfer the chicken breasts to the slow cooker.

Cover and cook on LOW for 3 to 4 hours, or until internal temperature of the chicken registers at 165˚F. Use an Instant Read Meat Thermometer to check for doneness.
