Quick and Easy Spaghetti Bolognese

olive oil

onion (finely chopped)

oregano

tomatoes

Heat the olive oil in a large pan over medium heat. Add the onions and sauté until lightly golden, 2 to 3 minutes.  Add the garlic and fry another minute.

Add the ground beef; fry until fully cooked and no pink shows at all in the meat (about 8 minutes). Add the oregano and tomato paste and mix with the meat.

Add the tomatoes, parsley, and bring to a boil. Season with the salt and pepper. Reduce the heat to low, and cook for at least 15 minutes (you can cook longer for a deeper flavor).

In the meantime, cook the spaghetti according to the package instructions. Drain and serve topped with the sauce and cheese (if using).

Bolognese Sauce

Add the oil to a dutch oven, or heavy bottomed pot over medium-low heat. Add the carrots, celery and onion and brown for 15 minutes

Turn the heat up to medium, then add the ground beef to the pot and cook until browned though. Drain any grease from the pot, then season with salt, pepper nutmeg and fresh garlic.

Stir in the tomato paste, then pour in the wine, making sure to scrape up the bottom of the pot. Bring to a simmer and leet reduce for 2-3 minutes.

Pour in the milk and tomatoes, stir and bring to a simmer.

Turn the heat back to low, stir and then let the sauce cook for for 1 1/2 hours, stirring occasionally.

Cook the beef:

Heat the olive oil in a large skillet or pot over medium-high heat. Add the ground beef and cook for 3 minutes, breaking it as you go, until no longer pink.

Add the veggies:

Add the onion and bell pepper and cook for another 3 minutes until the onion softens. Stir in the garlic, tomato paste, Italian seasoning, sugar, salt, pepper, and red wine. Cook for an additional 3 to 5 minutes or until the wine cooked off.

Add the tomatoes:

Add the crushed tomatoes, tomato sauce and bay leaves to the pot, stir and bring to a boil. Reduce the heat to a medium-low. Cover the pot and simmer for 2 to 3 hours, stirring occasionally. If your sauce is too thick add some of the beef or chicken broth to thin it out, or even pasta water.

Garnish and serve:

Taste for seasoning and adjust as necessary. Garnish with fresh parsley or basil and serve over pasta and garnished with Parmesan cheese.
