Cheesy Meatball Sliders feature seasoned ground beef wrapped around wedges of Babybel cheese. Individual sandwiches are drizzled with barbecue sauce, then topped with smoked gouda for a cheesy extravaganza!

Cheesy Meatball Sliders

beef

panko bread crumbs

egg ((beaten))

onion

sweet red peppers ((chopped))

steak seasoning

Tablespoons barbecue sauce

cheese

barbecue sauce ((for drizzling))

brioche slider buns

butter

bagel seasoning

Preheat oven to 350 degrees.

Combine ground beef, bread crumbs, egg, onion, sweet red peppers, steak seasoning and 2 tablespoons of bbq sauce together in a large bowl. Mix with a spoon or hands until blended together.

GROUND BEEF MIXTURE

Scoop 24 balls from the ground beef mixture onto a sheet pan using a 1 inch cookie scoop or your hands. 

Use the back of the cookie scoop to make an indention in each meatball.

Unwrap Babybel cheese and cut each round into 4 wedges. Insert one wedge into every meatball.

Roll ground beef mixture around cheese wedge to create a ball. 

Bake at 350 degrees for 15 minutes, then remove from oven.

MEATBALLS

Slice slider rolls lengthwise down the middle and place the bottom halves into a 13 x 9 inch baking dish. 

Place 2 meatballs on each roll.

Drizzle meatballs and bread with bbq sauce, then top with slices of smoked gouda cheese.

Place the top rolls on the cheese and close the sandwiches. Brush the rolls with melted butter. Sprinkle with bagel seasoning.

Cover baking dish tightly with aluminum foil. Bake at 350 degrees for 15 minutes until cheese melts and meatballs are cooked throughout.

Meatball Slider Bites

pack King’s Hawaiian Original Hawaiian Sweet Rolls

meatballs

jar 12 oz marinara sauce

mozzarella cheese

tbsp butter

parsley and garlic powder

Parmesan cheese

In a pot combine fully cooked meatballs and marinara sauce over medium heat.

Carefully use a knife to cut a hole in the tops of the King’s Hawaiian Rolls. Pull out the extra bread from the roll.

Mix 3 tbsp of melted butter with dried parsley and garlic powder. Brush the butter mixture all over the tops of the rolls.

Add a little bit of shredded mozzarella cheese to each of the rolls. Top each one with a meatball covered in sauce. Sprinkle on a little bit more shredded cheese on top.

Bake at 350 degrees for about 10 minutes or until the cheese is melted.

Serve with extra marinara and enjoy! Let me know if you try it out!

I made these tonight, and they turned out great! I used a shot glass to press the middle of the rolls a bit, and they held the ingredients perfect. This is a very quick and easy week night dinner.

This is a great recipe for a party.  Can they be made ahead and frozen?

I just made these for the first time and they are good but there are couple things I did differently. First, I cut the meatballs in 1/2 because the rolls are small and when you bake the rolls before adding the sauce and meatballs definitely keep an eye on them because they can burn. Other than that it’s an easy recipe

I'm excited to be making these &amp; taking to put church outing to hav lunch with the homeless close to our area. I know they're  gonna luv something warm &amp; tasty. I'll be sharing for future KC Chiefs games this fall.😋
