This delicious Meatball Soup Recipe bring meatballs and pasta together with onions, carrots, celery and green beans in a hearty beef broth that has been perfectly seasoned with Italian spices.  This quick and easy soup recipe comes together in less than 40 minutes making this a great weeknight meal.

In a large heavy stockpot heat olive oil over medium heat.  Add the chopped onion, carrots, celery and green beans.  Cook for 7-8 minutes or until slightly soft and fragrant. Add parsley, oregano, basil, garlic powder and onion powder.  Cook for 2 minutes; stirring constantly.

Pour in beef broth, tomato sauce, fire roasted tomatoes and meatballs; simmer for 7-10 minutes.  Add the pasta and cook for an additional 10 minutes; serve promptly.

This looks truly delicious. I made broth with liver dumplings before but have never thought of making meatball soup with a bit of pasta... until now! A great idea, thank you !

This soup! It's like Italian Wedding soup got a glow up! I love the inclusion of all the veggies. So hearty and healthy and perfect for this time of year when you just want to curl up with a filling bowl of soup.

grass-fed gorund beef*

cilantro

zucchini, (cut into quarter moons)

lime, (juiced)

In a large bowl, combine ground beef, eggs, cauliflower rice, cilantro, salt, pepper, garlic powder, onion powder, and oregeno Add all meatball ingredients in a large bowl and combine well. 

Scoop a heaping tablespoon of the mixture into your palms, and roll into 1-2 inch meatballs ( I get about 40 meatballs). Set aside.

Meatballs

Heat olive oil in a large Dutch oven, add in onion with a pinch of salt, and cook for 5-7 minutes or until softened and translucent.   Add in garlic and tomatoes, oregano, and another pinch of salt and pepper and cook for another 4-5 minutes.

Add in broth, bring to a boil and reduce back down to a simmer.  Carefully adding meatballs and simmer for 12-15 minutes.  Add in carrots, cabbage and zucchini and simmer for 30 minutes or until all the veggies are tender.

Adjust seasonings and finish with fresh lime juice and a big handful of fresh chopped cilantro.

Mini Turkey Meatball Vegetable Soup

1.3 turkey breast

whole wheat breadcrumbs*

parmesan cheese

parsley (finely chopped)

onion (minced)

garlic (minced)

tsp salt

oz chicken broth

garlic

14.5 oz cans petite diced tomatoes

Parmesan cheese rind (optional)

rosemary

bay leaves

Italian parsley

tsp kosher salt and fresh black pepper

oz zucchini (diced)

spinach

cheese

domestic turkey

bay leave

An egg is the organic vessel containing the zygote in which an animal embryo develops until it can survive on its own, at which point the animal hatches. An egg results from fertilization of an ovum. Preheat oven to 400°F.

In a large bowl, combine ground turkey, breadcrumbs, egg, parsley, onion, garlic, salt and cheese. Using your (clean) hands, gently mix all the ingredients well until everything is combined.

Form small meatballs, about 1 tbsp each, you'll get about 42. Bake in the oven about 12 minutes.

Meanwhile, heat the oil in a large pot or Dutch oven over medium-high heat.

Add the carrots, celery, onion, garlic and saute until tender and fragrant, about 15 minutes.

Add the broth, tomatoes, parmesan cheese rind, salt and pepper.

Add the rosemary,bay leaves, basil and parsley, cover and cook on low 40 minutes.

Remove the bay leaves, rosemary sprig, parmesan rind and drop the meatballs in along with the zucchini and spinach, cover and simmer until the zucchini is tender and meatballs are cooked through, about 8 to 10 minutes, season to taste with salt and black pepper if needed.

Serve with extra grated cheese on the side if desired.
