A healthy, lean deliciously-moist meatloaf packed with quinoa, veggies and protein! This gluten free meatloaf is FULL of mexican flavor!

Cheesy Chicken Quinoa Enchilada Meatloaf Muffins

For the quinoa:

quinoa

water

For the muffins:

garlic

onion

red or orange pepper, finely diced

olive oil

cumin

oregano

chili powder

few dashes of your favorite hot sauce

red pepper flakes,

cilantro

salt and black pepper,

red enchilada sauce, divided

chicken turkey breast

egg whites (or 1 egg)

reduced fat shredded colby jack or mexican cheese

To cook quinoa: In a small saucepan, bring water and quinoa to a boil. Cover, reduce heat to low and let simmer for 15 minutes or until quinoa has absorbed all of the liquid. Remove from heat and fluff quinoa with fork; set aside to cool for about 5 minutes. While the quinoa cooks you can move on to the next step.

Preheat oven to 350 degrees F. Spray a 12-cup muffin tin generously with cooking spray.

Heat olive oil in a medium skillet over medium heat. Add garlic, onion, and bell pepper. Cook for a few minutes or until the onions have softened. Transfer to a large bowl to cool for a few minutes.

Add cooked quinoa, cumin, oregano, chili powder, hot sauce, red pepper flakes, cilantro, salt and pepper and half of enchilada sauce (you'll reserve the rest for topping the muffins later).&nbsp;

Next stir in ground chicken (or turkey) and egg whites and 1/4 cup of the cheese. You may need to use your hands to ensure all ingredients are well combined.&nbsp;

Use a 1/4 cup measuring cup or an ice cream scoop to add meatloaf mixture evenly to muffin cups.

Bake for 25-30 minutes. Remove from oven and spoon remaining enchilada sauce and cheese over the tops of muffins.&nbsp;

Place back in oven and bake for an additional 3-5 minutes or until cheese melts and muffins are cooked.&nbsp;

Let cool for a few minutes then serve with fresh vegetables for a full meal. Makes 6 servings, 2 meatloaf muffins each

Mini Meatloaf Muffins

barbecue sauce

Tablespoon mustard

garlic powder

salt

black pepper

egg (, lightly beaten)

brown sugar

ketchup

dijon mustard

nutmeg

Preheat oven to 350 degrees F.

In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.

Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.

 In the meantime, in a small bowl mix together all of the ingredients for the sauce.  

Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.

Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.

Serve with mashed potatoes and any extra sauce.

Mini Meatloaf

Mini meatloaf muffins are easy to make with juicy, tender results. All the classic flavor of the original but in a bite sized mini meatloaf recipe that&#39;s ready in 30 minutes.!

Meatloaf Muffins

panko breadcrumbs

egg (, whisked)

parsley (, finely chopped)

Worcestershire sauce

Kosher salt

onion powder

Tablespoons light brown sugar

Preheat

Preheat the oven to 350°F. Lightly spray muffin pan and set aside.

Combine 1 1/2 pounds lean ground beef, 1/2 cup breadcrumbs, 1 egg, 2-3 Tablespoons parsley, 1 Tablespoon Worcestershire sauce, 1 Tablespoon ketchup, 3/4 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder in a large bowl. Mix just until combined. Don&#39;t overmix or the meat won&#39;t be as tender.

Press

Divide the meat evenly into the muffin pan and press down.

Sauce

In a small bowl, mix together the ketchup and/or BBQ sauce and brown sugar. Set aside.

Bake

Bake meatloaf for 15 minutes. Then remove from oven and absorb any extra grease with a fork and paper towel. Then pour sauce over the meat evenly. Add pepper on top if desired. Then bake an additional 10-15 minutes or until the center reaches 160°F.

Serve

Serve while warm with potatoes and green beans.

I am not a cook and made this today and it was fantastic!! Such good taste and so easy!! Used Whataburger ketchup so it had a little zing! Also used 1 lb. beef and 1/2 lb. ground turkey! This will definitely be one my repeat recipes to make and freeze some!!

So fun!! I made these for dinner and the kids went wild over them. It's amazing how much more they liked these than regular meatloaf!

I made this tonight. I love the portability and the quick bake time on the muffin tin meatloaf! I forgot to saute my onions and green peppers before I added it to the meat mixture to bake, I will remember next time. It just added a little bit of a crunch! Great flavor! I served with corn bread, sweet potatoes and a kale/spinach mixture. My almost 2 year old loved it and she doesn't usually eat meat! Thank you!

Meatloaf Muffins are a fabulous alternative to regular meatloaf. Kids just love them and mini meatloaf muffins cook much faster than traditional meatloaf.

Mini Meatloaf in a Muffin Tin Recipe

cup Parmesan cheese

Salt and pepper

Worcestershire sauce (about a teaspoon)

Preheat oven to 350 degrees. Spray muffin tin with oil.

Mix all the ingredients together in a bowl, but only use about ¼ of the tomato sauce/ketchup in the meat mixture. Reserve the rest for the tops of the meatloaf muffins.

Press the meat into the muffin cups (you should be able to get eight to 10 out of this amount of meat).

Top with a dollop of tomato sauce/ketchup on each one.

I never in my life liked meatloaf, then a coworker brought these mini ones for supper one day. They smelt delish and I had to try. I found this recipe and now I like meatloaf! Thank you

These are delicious, and super easy to make! I used 1 egg and used Ritz crackers for the bread crumbs. Also did ketchup instead of tomato sauce. Delicious!!!

Came out great,  I had to make mine in a loaf pan but the flavor is really good and didn't dry out either.

Made this with cheddar cheese stuffed in the middle. Also added a bit of mustard and onion powder to the meat. Turned out perfect!

This was delicious. I had bought a broccoli and carrot salad that wasn't what I thought it would be and no one was eating it. I was able to put it in the meatloaf and everyone gobbled it up. Definitely my go to Meatloaf recipe from now on. Great in mini tins or as a big loaf. Make a triple batch if you want to freeze any. They go fast.

I make these 2x a month at least! I add brown sugar, ketchup, hot honey &amp; red pepper flake glaze! They cook quickly and are delicious!

Have been looking for a tasty version of these for a while.  Happy to have found this one.  Definitely being added to our collection of go to recipes. Only thing I did was added qtr cup of each: shredded carrots, finely chopped onions, and bell pepper.  Served with roasted broccoli and a salad.  So good, and so quick.
