One-Skillet Mediterranean Chicken Recipe with Tomatoes and Green Olives

boneless, skinless chicken breasts

tbsp minced garlic or garlic paste

Salt and pepper

tbsp dried oregano, divided

Private Reserve extra virgin olive oil

dry white wine

lemon, juice of

chicken broth

red onion

small-diced tomatoes

green olives

fresh parsley, stems removed, chopped

feta cheese, optional

Pat the chicken breasts dry. On each side of the chicken breasts make three slits through.

Spread the garlic on both sides; insert some garlic into the slits you made. Season the chicken breasts on both sides with salt, pepper and 1/2 of the dried oregano.

In a large cast iron skillet, heat 2 tbsp of olive oil on medium-high. Brown the chicken on both sides. Add the white wine and let reduce by 1/2 then add the lemon juice and chicken broth. Sprinkle the remaining oregano on top. Reduce the heat to medium. Cover with a lid or tightly with foil. Cook for 10-15 mins turning the chicken over once (chicken's internal temperature should reach 165 degrees F.)

Uncover and top with the chopped onions, tomatoes and olives. Cover again and cook for only 3 minutes. Finally add the parsley and feta cheese. Serve with a light pasta, rice or couscous. Enjoy

Wow, what a versatile recipe! I was able to take these basics (along with recommendations from other comments) and really create an amazing dish that will be in our regular rotation! 

I used six boneless, skinless chicken thighs in an oven-safe skillet. I followed the recipe for slitting the chicken and adding the minced garlic, s&amp;p, and oregano, and browned in the pan. Then after adding the wine (I used Sauvignon Blanc) and chicken broth to deglaze the pan, I added some of the diced onion and diced baby portobello mushrooms. At that point I put the skillet in the oven for 10 min.

After returning the skillet to the stovetop, I added capers (not a fan of olives), chopped marinated artichoke hearts (and some oil from the jar), diced Roma tomatoes, and the rest of the chopped red onion. Then topped with red pepper flakes, fresh spinach and feta cheese! Served with glasses of Sauv Blanc and brown rice to soak up the sauce... omg. So good. It was amazing!!!

We LOVED the flavors and quick prep/cook time! The only thing I changed was using Kalamata Olives instead of Green. This will be going into our "regular" meals! Thank you!!

This one pot Mediterranean chicken skillet recipe is a quick and easy weeknight dinner that&#39;s loaded with flavor. Chicken breasts are cooked in a Mediterranean tomato sauce and topped with feta cheese for a tasty family meal everyone will love.

Mediterranean Chicken Skillet Recipe

boneless, skinless chicken breasts (*)

cooking oil

onion (diced)

tomatoes (1 can, undrained)

olives

white wine (**)

lemon juice (from ½ lemon)

salt

Italian seasoning

garlic powder

sugar

parsley (plus more, for garnish)

feta cheese (optional,

Cut chicken in half lengthwise and season on both sides with salt and pepper.

Heat

Heat a large skillet with 1 tablespoon oil and cook chicken 2-3 minutes on each side, until browned and almost cooked though (it will finish cooking later).

Saute

Add 1 tablespoon oil and onion to the same pan and cook until translucent, about 3-4 minutes.

Stir

Add in tomatoes, kalamata olives, white wine, lemon juice, salt, Italian seasoning, garlic powder, and sugar. Simmer covered for 15-20 minutes, stirring occasionally.

Cook

Stir in parsley and add chicken back to the pan. Cook chicken until it reaches an internal temperature of 165℉ and juices run clear.

Serve

Take off heat and garnish with feta cheese and additional chopped parsley. Serve warm.

So good! Husband said it was restaurant quality and great leftover. Subbed mozzarella for the feta. Yum!

This authentic Greek chicken souvlaki recipe features tender, marinated chicken skewers grilled to perfection with bold flavors of lemon, garlic, and oregano. Start by cutting the chicken into bite-sized cubes. preparing the marinade ingredients by mincing garlic cloves, finely chop rosemary leaves and grind coriander seeds. 

Prepare the marinade by combining olive oil, lemon juice, minced garlic, greek yogurt, oregano, rosemary, ground coriander, salt, black pepper and mustard. Add in the chicken and mix well. Marianne ideally for 2–4 hours for tender chicken. 

While the chicken marinates, make the Greek-style dressing by combining mayonnaise, avocado oil, white vinegar, lemon juice, garlic powder, black pepper, oregano and salt. Blend using an immersion blender until well combined. 

Prepare the salad ingredients by chopping romaine lettuce, cherry tomato, cucumbers, red onion and feta cheese.

When ready to cook, line the marinated chicken onto metal skewers. 

Gently melt some butter in a small pan, then squeeze in fresh lemon juice and stir to combine—this will be your basting sauce.

Preheat an outdoor grill or a grill pan to medium-high heat. Grill the chicken skewers for about 3 minutes on each side until grill marks are apparent, brushing the chicken with lemon butter in between cooking. Then cover with a lid, reduce the heat to low and cook for another 5 minutes. 

Drizzle the greek style dressing over the salad and chicken to enjoy.
