An easy Mediterranean cucumber salad featuring crunchy cucumbers, sweet tomatoes, briny olives, fresh herbs, and tangy feta cheese. Naturally low carb!

Mediterranean Cucumber Salad

grape tomatoes, halved

cucumber,

red onion, sliced thinly

feta cheese, crumbled

Kalamata olives, halved

tbsp extra virgin olive oil

salt and pepper

chopped fresh mint, parsley, basil, oregano

fennel

minced garlic

vinegar lemon juice

Peel and cut the cucumber. Halve the tomatoes and Kalamata olives. Slice the red onion. Crumble the cheese

Add all ingredients to a bowl except for the olive oil. Refrigerate until ready to serve. Toss with olive oil and season with salt and pepper to taste.

Make it new each time by trying variations listed above. Lasts 2-3 days covered in the refrigerator. Serves 4 at 4 net carbs each.

Mediterranean-Inspired Cucumber Chickpea Salad

(15 oz.) can chickpeas, drained and rinsed

cherry or grape tomatoes, quartered

mint ((or sub up to half with parsley))

red onion

lemon juice

olive oil

tsp balsamic vinegar ((for sweetness))

tsp sea salt ((plus more to taste))

tsp black pepper

vegan feta crumbles

Place all ingredients (except vegan feta) in a medium-sized bowl and toss well to combine. Add the vegan feta (optional) and toss again. Taste and adjust, adding more lemon juice for brightness, olive oil for richness, or vegan feta for saltiness.

Serve chilled or at room temperature. We love pairing this salad with brown rice and tofu or salmon for a simple meal. It’s also delicious on avocado toast and in wraps.

Best when fresh. The cucumber will continue to release liquid as it sits, so if not serving immediately, it’s nice to serve with a slotted spoon to reduce excess liquid.

This Mediterranean Cucumber Salad is a simple, healthy and easy-to-make side that pairs very well with grilled meats or fish!

red wine vinegar

tbsp dijon mustard

tbsp honey

shallot (minced)

oregano

½ tsp kosher salt

¼ tsp pepper (freshly cracked)

baby cucumbers (diced)

½ red onion (sliced)

chickpeas

cherry tomatoes (halved)

tbsp dill (minced)

First make the dressing by combining the olive oil, red wine vinegar, honey, lemon juice, shallot, oregano, salt and pepper in a mason jar or bowl.  Shake or whisk together until it’s combined.  Set it aside while you assemble the salad.

In a salad bowl, combine the diced cucumbers, red onion, chickpeas, tomatoes, and dill.  Toss with about 3 tablespoons of the dressing.

Allow it to marinate for approximately 30 minutes and serve the remainder of the dressing on the side.

This Mediterranean Cucumber Salad is the best side salad to pair with any main dish. It’s refreshing flavor pairs well with any grilled food or can be served as a part of multiple appetizers.

cucumbers

tomato (I used small grape tomatoes)

mint leaves (chopped)

parsley (chopped)

extra virgin olive oil (good quality)

lemon juice (fresh)

salt

black pepper (to taste)

kalamata olives (green olives)

feta cheese

bell peppers

Wash and cut all fresh veggies (tip: for best flavor chill the vegetables prior)

If you want the salad to remain fresh longer you can remove the seeds from the tomato and cucumber but it is not necessary because I&#39;d make as much as you&#39;d consume on the day 1.

Mix the salad dressing in a small bowl or mason jar.

Place cucumbers, tomatoes, onion, mint, parsley in a large mixing bowl, toss in the dressing, and serve! Optional add ons include salty feta cheese, trio of olives, bell peppers, artichokes.

I was thinking the same thing about the avocado!! I'm going to give it a try when I make this tomorrow!
