How To Cook Filet Mignon Recipe by Tasty

On a cutting board, pat the filet mignon dry with paper towels and let sit at room temperature for 20-30 minutes.

Generously season all sides of the filet mignon with salt and pepper.

Heat a medium, oven-safe stainless steel or cast iron skillet over high heat for 5 minutes. Add the grapeseed oil.

Once the oil beings to smoke, add the filet mignon to the pan. Cook without moving for 2-3 minutes, until a crust has formed.

Use tongs to flip the steak over, then add the butter, rosemary, and garlic to the pan.

Tilt the pan and spoon the butter continuously over the steak for 2-3 minutes.

Transfer the pan to the oven for 7 minutes for a medium rare steak.

Transfer the steak to a cutting board and let rest for at least 10 minutes before slicing.

The Perfect Bottom Round Roast

lb bottom round roast

tsp minced garlic

Preheat the oven to 450°F or 232°C.

Remove the fully thawed roast from the fridge and remove it from the packaging.

Place the bottom round roast on a cutting board.

Brush the entire surface of the roast with olive oil (you can use avocado oil as well).

Combine all of the seasonings in a small bowl.

Rub the seasonings over the entire surface of the roast - top, bottom and all sides.

Place the roast in a cast iron skillet.

Cook for 20 minutes at 450 degrees.

Reduce heat to 170°F or 77°C and continue cooking low and slow.

Cook the roast until the internal temperature reaches around 135-140 degrees (medium-rare is 145 degrees but the roast will cook as it is cooling).

Slice and serve if you want to serve it medium-rare.

If you want to serve it medium or medium-well, slice the roast in the cast iron pan, pour 2 cups of beef broth in and heat on the stove over low heat until the slices reach the desired level of done.

2.5 kg Boneless Rolled Rib of Beef Joint

90 ml Olive Oil

550 ml Brown Ale (We used Newcastle Brown Ale)

tbsp Mixed Herbs

tbsp Coriander Seeds (Grinded

Garlic

Onions (chopped in half)

Carrots (chopped in half)

Mix together ale, olive oil and mixed herbs.

Rib of Beef

Add the boneless rib of beef joint and fully coat the whole joint of the beef.

Marinade

Cover and keep in the fridge for at least 2 hours, preferably overnight to marinade

Preheat

1 hr before cooking, remove the boneless beef joint from the fridge and out of the marinade. Preheat the oven at 210°C fan or 450°F

Vegetables

Chop onions, carrots and garlic bulbs and place in the baking tray, this prevents the meat from touching the bottom of the tray. You could use a rack instead?Now pour the brown ale marinade mixture into the baking tray

Grind

Grind coriander and peppercorns with a mortar and pestle or use already ground coriander and peppercorns

Pepper

Sprinkle the crushed coriander and peppercorn over the top of the beef joint.

Sear

Place in the oven at 210°C fan / 230°C / 450°F for 10 min, this will sear the meat.

Roast

After 10 minutes, turn down to 180°C fan / 200°C or 400°F and cook for a further Times shown are for 2500g/2.5kg/5.5lb (instructions for smaller/bigger joints will need time adjusted, see blog post for guidance)Rare - 1hr 20 min Medium Rare - 1hr 50 min (this is how we cooked the one shown in images)Medium - 2hr 15 minWell Done - 2hr 40 min

Rest

Cover roasting tray loosely with foil and allow to rest for at least 20 minutes. This is an important step to allow the juices to settle throughout the joint.

Carve

Once rested, carve into desired size slices. Ready to serve.

Sous Vide Steak

Salt and pepper (or seasoning) to taste

Set sous vide machine to 55C/131F.

Season steak lightly with salt or a seasoning of your choice. Place meat in sous vide bag and remove the air through a vacuum sealer or the displacement method. Drop the bag in the bath for an hour and a half.

Preparation

Remove bag from bath. Take steak out of the bag, pat dry with paper towels and season with salt and pepper (or seasoning) to taste.

Heat up large skillet on high and add oil. Sear steak for 1 to 2 minutes on each side. Remove from pan, and place on a plate to rest for 5 minutes. Once rested, serve and enjoy! Alternatively sear the beef on a grill or using a searing torch.
