This Mentsuyu Recipe (Cold Soba Noodle Sauce) is ready in minutes! Made from soy sauce, mirin, sake and dashi powder, it's a super refreshing dipping sauce for a hot summer's day.

Quick Mentsuyu Recipe (Cold Soba Noodle Sauce)

soy sauce

mirin

tbsp cooking sake (rice wine)

dashi powder

Stir together your soy, mirin, sake or rice wine and dashi powder in a saucepan and gently bring to the boil, stirring occasionally.

Take it off the heat and set aside, allowing it to cool completely before use.

(Optional) Garnish with a sprinkling of aonori powder or thinly sliced nori for extra flavour.

For the sauce:

If you’re ready to eat, go ahead and bring a medium pot of water to the boil, then add in your soba noodles. Cook according to packet directions (usually around 3 mins or so), then drain and remove from the heat.

For the most refreshing experience, allow your noodles to cool completely before serving. You might like to run them under cold water to speed this up, or pop them in the fridge for 10 mins or so before serving so they cool down more quickly.

How to Make Mentsuyu - Japanese Cold Soba Noodle Dipping Sauce

How to make 200ml of versatile Japanese Tsuyu Sauce from scratch. Great for adding umami flavour to noodles, broths and sauces.

Tsuyu Sauce from Scratch

Pour the mirin into the saucepan and heat on medium/high.

Bring it to the boil and continue to heat for 30 seconds.

Add the soy sauce and sugar and boil for a further 30 seconds.

Once cooled, pour into a jar or sealable container and add the mushrooms.

Keep in the refrigerator over night before using.

The next day, take out the mushroom and store once again in the refrigerator for up to one month.

This quick &amp; easy zaru soba recipe features cold soba noodles dipped in an ultra-flavorful flavorful Tsuyu sauce made with only 4 simple ingredients from your pantry! This light and refreshing meal takes just a few minutes to prepare, and truly the ultimate way to cool down on a hot summer day. 

10-Minute Zaru Soba (Cold Soba Noodles)

oz (two bundles) soba noodles (or more)

sesame seeds, shredded nori, and microgreens (optional,

(240 milliliters) dashi ((2/3 tsp of instant dashi mixed

(65 milliliters) soy sauce

(70 milliliters) mirin

tbsp (10 grams) sugar

Add dashi, soy sauce, mirin, and sugar into a saucepan and bring to a boil, stirring to ensure the sauce is well combined. Set aside to cool, or place in the fridge/freezer to speed up the process.

Cook noodles according to package instructions. Drain and rinse the noodles under ice-cold water tossing them to cool evenly, and drain them of excess water. Garnish your noodles with shredded nori, sesame seeds, and/or microgreens as desired.
