Crunchy Maple Meringue 

(250 ml) maple syrup

(1 ml) cream of tartar

With the rack in the middle position, preheat the oven to 75 °C (170 °F). Line 2 baking sheets with parchment paper. 

In a saucepan, bring the maple syrup to a boil and reduce until a candy thermometer reads 120 °C (250 °F). Remove from the heat while you beat the egg whites. 

In a bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the hot syrup to the egg whites, beating constantly. The whites will gain in volume and release some steam. Continue to beat for 2 to 3 minutes, until the stiff peaks form. 

With a pastry bag fitted with a plain tip or with the back of a spoon, shape the meringues directly on the baking sheets, shaping them in approximately 10-cm (4-inch) in diameter and 1.5-cm (1/2-inch) thick nests, shells, or discs. 

Place the baking sheets in the oven and let the meringues dry gently for about 3 hours, depending on their thickness. Turn the oven off and leave the meringues in the oven for another hour.   

Quelle belle trouvaille!! Très simple et facile ! Une fois sèches, il faut vraiment les mettre dans un récipient hermétique sinon elles deviennent collantes et molles !!

j'ai réussi 2 fois mais c'est fiasco.  les blancs étaient parfait pics mous et des lorsque j'ai ajouté juste un peu de sirop bouillant tout est devenu liquide instantanément et n'a plus jamais refait de pics ni meme mou.  je ne sais pas quoi faire avec cette mixture liquide!!!

J aimerais savoir pourquoi sa tourne liquide quand j ajoute le sirop aux blanc d oeufs

Je n'ai pas de crème de tartre, est-ce que c'est absolument nécéssaire ? Puis-je la remplacé par autre chose ?

Bonjour. Je suis entrain de faire cette recette. Mes meringues sont au four depuis 1 heure et il y a quelque chose qui cloche. On dirait que le sirop d'érable se retire de mes meringues. Il se fait une accumulation de sirop autour de chaque meringue. Est-ce parce que j'ai utilisé des blancs d'œuf commerciales?

puis je faire cette meringue dans une assiette a tarte avec fruit au fond recouvert d un sirop et mettre la meringue dessus et la cuire au four pour la dorer

Little lemon meringue pies

pack shortcrust pastry

unsalted butter

caster sugar

Heat oven to 180C/fan 160C/gas 4. Roll out pastry and use to line 8 x 10cm fluted loose-bottomed tart cases, leaving a little pastry overhanging. Prick the cases with a fork and bake blind for 20 mins (removing the paper and beans after 15 mins) until pale golden brown. Set aside to cool. When cool, use a serrated knife to neatly level the pastry.

Meanwhile, put the zest, juice, butter and 225g sugar into a large heavy-based pan. Heat gently until the sugar dissolves, then remove the pan from the heat. Beat the whole eggs and yolks together, then stir into the pan. Stir over a low heat for 5-10 mins until thickened. Sieve into a bowl, then spoon into the cases. Any leftover curd will keep in the fridge for up to 3 days.

Whisk the egg whites with 50g sugar in a grease-free bowl until stiff peaks form. Whisk in the vinegar, then gradually whisk in the remaining sugar. 4 Put a good dollop of meringue on top of each tart, then dip a palette knife in hot water and make little peaks on each. Place on a baking sheet and bake for 15 mins or until just browned on top. Allow to cool, then serve.
