This Pork Chile Colorado with Nopales recipe is to die for. Tender pork in a RICH, red chile sauce with incredible depth of flavor. This dish is seriously OMG delish!

Pork Chile Colorado with Nopales

Chile Guajillo (stems removed, seeded and deveined)

Ancho Chile (stems removed, seeded and deveined)

water

tspn salt

tspn cumin

garlic

onion

pork broth ((or chicken broth))

cactus paddles ((thorns removed))

tspn baking soda

olive oil

lbs diced pork (1-inch pieces)

tbsp salt ((or chicken bouillon))

tspn ground pepper

onion (diced)

Cut the stems off, and remove the seeds and veins of all the chiles.

Add the chiles to a large stock pot.

Cover with water.

Bring to a boil.

Turn heat off.

Let sit in the pot for 5-10 minutes, or until pliable.

Discard the water.

Add the rehydrated chiles to a blender.

Add salt, cumin, garlic, onion, and pork broth to the blender.

Blend until smooth.

Set aside until ready to use.

For the Chile Colorado Suace:

Carefully remove the thorns (if necessary) with a sharp knife.

Rinse the cactus paddles.

Dice into 1-inch pieces.

Place them in a stock pot and cover with water.

Add salt and baking soda to the pot.

Boil for 10 minutes.

Discard water and rinse the cooked nopales.

For the Cactus Paddles:

Heat the olive oil.

Season the pork with salt, pepper, and cumin.

Add the pork to the pot.

Brown the meat.

Stir occasionally.

This will take about 5 minutes.

Add the diced onion and cook for 1 minutes, or until translucent.

Add the pork broth and chile colorado sauce.

Mix to combine.

Cook for 25 minutes on medium heat.

Add the nopales.

Cook for 5 additional minutes.

Serve and enjoy!

For the Pork:

Nothing beats a big bowl of delicious Pozole Rojo on a cold day. Tender pork stewed for hours mixed with a rich chile sauce and hominy. So yummy and so easy to enjoy!

Pozole Rojo

lbs pork shoulder (cut 1-inch pieces)

garlic cloves

chicken bouillon (cubes)

bay leaf

guajillo peppers (cleaned,

ancho chile (cleaned, seeded, and deveined)

white onion (rough chopped)

oregano

Salt (to taste)

hominy

iceberg lettuce (or shredded cabbage)

onion (finely diced)

radishes (sliced)

lime

avocado

Add water in a large stock pot.

To the stock pot, add the pork meat, onion, garlic, bouillon, bay leaf.

Bring to a boil, then lower heat. Let simmer for 2/12 to 3 hours, until meat is tender.

Once it&#039;s cooked, discard onion, garlic, and bay leaf from the broth.

Be sure to skim the fat from the top of the pot.

To Make the Pork:

While the meat is cooking, soak the ancho and guajillo chiles in hot water for 30 minutes or until they are soft.

Blend the chiles, garlic cloves, onion, oregano, salt, and 1 cup of the water used to soak the chiles.

Puree mixture until smooth.

For the Red Chile Sauce:

Place a stainer over the pot with the pork.

Strain the sauce into the pot.

Bring it to a boil.

Add white hominy.

Taste for salt.

Simmer for 10 minutes, or until hominy is heated.

Serve along with toppings.

3-Ingredient Slow Cooker Carnitas are so easy they just about cook themselves. Just toss it in the crockpot and go!

Slow Cooker Carnitas (3-Ingredient Pork Recipe) + Video

pork shoulder

green salsa

salt (to taste)

black pepper (to taste)

Place pork in the bottom of the crockpot. Sprinkle onion over top and pour salsa over top.

Cover and cook for 3-4 hours on high or 6-8 hours on low.  Once cooked through, use 2 forks or meat claws to shred pork. Season with salt and pepper to taste. Mine usually needs just a pinch.

Stir, cover and allow to cook for 30 minutes longer so the pork can absorb all those yummy juices.

I love to use boneless for this recipe, It makes everything easier. This was so good, and I can't wait to make more!
