This Authentic Mexican Rice recipe is made with simple ingredients like chopped tomatoes, onions and garlic and is the perfect side dish for any meal.

Authentic Mexican Rice Recipe

olive oil

long-grain white rice, (rinsed and drained)

roma tomato, (diced)

white onion, (diced)

garlic ((or 4 cloves, minced))

water

tomato paste

salt, (to taste)

In a large skillet over medium-high heat, add the olive oil.

When the oil is hot, add in the rinsed rice and sauté for 10 minutes, stirring occasionally, until the rice begins to brown very slightly. At this point, some grains of rice may even pop. That's okay. This step adds some nuttiness and more depth of flavor to the rice.

Add in the diced tomatoes, onions and minced garlic. Sauté&nbsp;for about 30 seconds.

Add in the water, tomato paste and a generous pinch of salt. Stir together to mix until the tomato paste has fully dissolved.

Bring the rice to a boil, lower the heat to simmer and cover.&nbsp;Let cook for 20 minutes, or until all the water has evaporated from the skillet and the rice is fully cooked through.

Authentic Mexican Rice

One of the most popular sweet desserts we have in our Mexican culture is the Mexican Rice Pudding “Arroz con leche”, which, as with the other candies or desserts I mentioned above, is all natural, easy to make and very delicious. I hope you enjoy this delicious recipe.

MEXICAN RICE PUDDING

Cup short white rice*

Cups of water

cinnamon stick (see picture below)

whole milk**

condensed milk

raisins (optional)

cinnamon

Place water, rice and the piece of cinnamon in a medium saucepan. Turn heat to high and bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, until rice is tender.

While the rice is cooking, mix the whole milk with the condensed milk and stir well.

The rice will be ready when all the water has evaporated and it has formed some holes over the surface like in the above picture.

Remove pot from heat. Pour the whole milk and condensed milk mix into the saucepan and stir. If you would like to add the raisins or vanilla extract, you can add them now.

Return saucepan to heat, cover and keep cooking until it thickens. It will take about 5 to 10 minutes. Stir occasionally to avoid it from sticking to the bottom of the saucepan.

If the rice looks too dry for your taste, add 1/4 cup of warm whole milk and stir. The end result has to look like a soft and creamy pudding.

If serving warm, place in small cups and sprinkle ground cinnamon. When serving cold, pour rice pudding into a container and cover with a plastic wrap pressed down to the rice surface and refrigerate. Dust with cinnamon when serving.

Creamy Mexican Rice Pudding Recipe, also known as Arroz con Leche

Mexican Rice Pudding

Step-by-Step Guide on how to make Instant Pot Arroz con Leche! Easy to make rich and creamy Mexican Rice Pudding with few pantry ingredients. No need to stand by the stove to make this delicious, heartwarming, and comforting dessert.

Instant Pot Arroz con Leche

(230 grams) jasmine rice

(250 milliliters) cold water

(3.5 grams) cinnamon stick ((substitute: 1 teaspoon cinnamon powder))

(12 ounces or 354 milliliters) evaporated milk

(5 milliliters) vanilla extract

¼ teaspoon (1.5 grams) table salt

(10 ounces or 300 milliliters) sweetened condensed milk

raisins

star anise

lemon lemon

unsalted butter

Add Rice and Spice in Instant Pot

Add Rice and Spice in Instant Pot: Rinse rice under cold water 2 to 3 times, then drain well. Add 1 cup (230g) Jasmine rice and 1 cup (250ml) cold water to the Instant Pot. Make sure all the rice is completely submerged in water. Then, add in 1 (3.5g) cinnamon stick, 1 star anise, and lemon zest.

Pressure Cook Rice

Pressure Cook Rice: Close the lid. Turn Venting Knob to Sealing Position. Pressure Cook at High Pressure for 6 minutes, then Natural Release for 10 minutes. Release the remaining pressure by turning Venting Knob to Venting Position. Open the lid carefully.

Make Arroz con Leche

Make Arroz con Leche: Add 1 can (354ml) evaporated milk to the Instant Pot. With a spatula, give it a few stirs to mix well. Make sure you release all the rice from the bottom of the pot with your spatula. Press 'Cancel', then press 'Saute' button to 'Saute Normal' mode. Add in 1 tsp (5ml) vanilla extract, ¼ tsp (1.5g) table salt, and 1 can (300ml) sweetened condensed milk.Amy + Jacky&#39;s Tip: Make sure to taste and adjust the sweetness by using more or less sweetened condensed milk according to your preferences (see notes).

Thicken and Serve

Thicken and Serve: Keep stirring until the rice pudding starts to simmer. Stir and add in raisins. Allow the rice pudding to simmer for another minute or two until it reaches your desired thickness. *Note: The rice pudding will continue to thicken as it cools down. Optional: Add and melt 1 tbsp (14.5g) unsalted butter in arroz con leche. Taste and adjust the sweetness by adding more sweetened condensed milk if necessary. Press “cancel” to turn off the heat. Add more raisins and lemon zest, then sprinkle cinnamon powder on top of the Arroz con Leche. Serve and enjoy this heartwarming dessert~

Mexican version of rice pudding with a touch of cinnamon

Place saucepan over medium low heat and add rice, water, and cinnamon sticks.

Cover and cook until rice is cooked and water is absorbed, about 15-20 minutes.

Add milk and sugar, stir to combine, cover and cook for additional 15 minutes.

Cook longer for a thicker arroz con leche resembling rice pudding. Add more sugar or sweetener of choice if needed.

In a large saucepan, combine rice, sugar, almond milk, rice milk, vanilla extract, cinnamon sticks, and cloves. 

Bring to a boil and then lower heat to low heat and simmer the rice until it is very soft and achieves a thick, pudding-like consistency, about 35 minutes. Cover and let rest for 10 minutes. 

Remove the cinnamon sticks and cloves. 

This rice pudding can be served warm or chilled and sprinkled with ground cinnamon. 

Yvette, love, love this recipe. Made for dessert tonight, it filled the house with some amazing aroma. Reminded me of my Moms arroz con lèche. This Non-dairy was the best part, I may add some raisins next time. Love it and will make it again!!!
