Place the eggplant slices on some paper towels and sprinkle with salt. Let the eggplants "sweat out" any bitterness for 20 minutes or so. Pat dry.

Preheat the oven to 400 degrees F. Place the eggplant slices on a lightly oiled baking pan, drizzle generously with olive oil. Roast for 20 minutes.

Meanwhile, assemble the remaining ingredients on a large serving platters. Begin with the two hummus spreads on opposite sides. Place Tzatziki sauce in the cored bell pepper right at the center of the platter. Assemble the remaining ingredients on the platter to your liking. When the eggplant is roasted to a nice medium-brown, remove it from the oven and sprinkle with 1 tsp of sumac. Add the roasted eggplant to the platter.

You can cover and refrigerate this mezze party platter; take it out a few minutes before your guests arrive. Enjoy with warm pita and crostini or your choice of crackers!

This looks amazing and I'm making it tomorrow.  Can't figure out what kind of eggplant you used to get that shape from the slices.  Are they the Japanese eggplants and you sliced them vertically and then across?

For  Thanksgiving, I took my host what I thought was an appetizer tray based on charcuterie. I included cheeses, some grilled vegetables. grape tomatoes, olives, marinated artichoke hearts, a few random peppers I found at the olive bar (Peppadews, sweetie drop peppers), dolmas, and I can't remember what else.

Maybe I should have stuck with American, French, Latin, or Meditteranean "small plates", but frankly, it was fun to mix things up and include what I like!

We usually do the antipasti platter (my family is from the Adriatic side of the Mediterranean) but I think I'll change it up this year and do the mezza platter instead!

For a small birthday / Mother's Day celebration, we enjoyed putting our mezzo platter together with most of your suggestions.....also made your best layered hummus dip alongside.  My guests took pictures of the table, which is not a routine occurrence in my kitchen!   Everything was so delicious and filling--and fun!--but not heavy or rich.   For dessert, your Greek yogurt parfait with kailua and nuts was perfection.

Thank you, thank you--your work is truly exceptional!  My only suggestion: the recipe index feature seems off (unless it's me?)  For example, when I enter "hummus", the layered hummus dip recipe doesn't arrive in the options.  Then again, it's definitely worth the search :)

How to Build the Perfect Mezze Platter

This mezze platter is an assortment of snack options including salads, cheeses, olives, hummus, pita bread and vegetables, all arranged as a hearty appetizer plate to serve a crowd. A simple yet impressive offering that always gets rave reviews.

Brush 2 teaspoons of olive oil over both sides of the pita bread. Heat the pita bread in a 400 degrees F or on a grill for 3-5 minutes or until warmed through. Cut each pita into eighths.

Arrange the pita bread, hummus, tzatziki, fresh and grilled vegetables, olives, feta cheese, tabbouleh and dolmas on a larger platter.

Drizzle the remaining 2 teaspoons of olive oil over the hummus and tzatziki. Garnish the platter with fresh herbs, then serve.

On a large serving platter, use a large spoon to drop the hummus, muhammara, tzatiziki, and labneh into separate rounds throughout the board so that you&#8217;re creating negative space to nestle your other ingredients in. I also like to place the feta now as it is another large item.

Slice up your veggies and arrange them around the dips.

If using grape leaves or a prepared salad, position on the easily accessible edges of the mezze board.

Place your pita bread or crackers into the remaining empty spots. Last fit the olives into any remaining spots.

If desired, top with fresh mint, parsley, and cilantro to add some extra flavor!

Devour! If you don&#8217;t finish your mezze board, you can wrap it in plastic wrap and place in the fridge for up to 5 days!

On a large board or serving platter, create some anchor points with bowls of your favorite dips, sauces, and spreads such as hummus, tapenade, and eggplant dip.

Add bowls or piles of appetizers, like artichoke hearts, marinated feta cheese, olives, and Greek dolma (stuffed grape leaves).

Fill in the gaps with soft pita bread, crunchy pita chips, and plenty of fresh vegetables like cucumber sticks, heirloom baby carrots, and cherry tomatoes (preferably still on the stem). Add quartered fresh figs, if you can find them.

Prepare both the dips few hours before the party and keep in the fridge.&nbsp;

Next, prepare the mixture for falafel, shape them, arrange in a plate and keep in the fridge until ready to deep-fry.&nbsp;

Meanwhile, arrange the remaining elements in a large, serving platter except for nuts and keep that as well in the fridge.&nbsp;

Before serving, heat oil in a frying pan for falafel. Fry them in small batches and transfer to a plate lined with an oil absorbent paper.&nbsp;

Arrange prepared dips, falafel and assorted dry fruits in the mezze platter.&nbsp;

lbs red bell peppers ((See Note 1))

walnuts

red onion (diced)

garlic (minced)

tomato paste

tsp cumin

tsp Aleppo chile flakes ((See Note 2))

panko breadcrumbs ((See Note 3))

pomegranate molasses ((See Note 4))

tbsp walnuts (chopped)

Toast the 1 cup + 2 tablespoons for walnuts in a dry skillet over medium heat for 5 minutes. Separate and set aside.

Roasted Peppers: If using jarred, roasted red bell peppers go to Step 3 below, if making from scratch preheat oven to 450°F. Line a rimmed baking sheet with parchment paper and oil the peppers. Place on baking sheet and roast for 40 minutes, or until softened and charred. Turn once during roasting. Remove from oven, place in a bowl and cover with towel and cool for 15 minutes. When cooled, remove and discard the skin, seed and stems. You should have 14 ounces total weight.

In a skillet over medium heat add 2 tablespoons oil and saute the onion until browned, about 5-6 minutes. Add the garlic, tomato paste, cumin and chile flakes. Cook another minute. Spoon into a food processor along with the roasted peppers, 1 tablespoon of oil, breadcrumbs, pomegranate molasses, lemon juice, salt and pepper. Process for 30 seconds and then add 1 cup toasted walnuts. Process again for another 30 seconds to keep chunky.

Transfer to a shallow serving dish, top with a drizzle of olive oil, reserved 2 tablespoons of toasted walnuts (crush with hands) and parsley. Great with warm pita to scoop or vegetables.

Muhamara (Roasted Red Pepper Dip)

Soutzoukakia are Greek meatballs baked in tomato sauce. Make this baked meatball recipe for a delicious entree or part of a mezze platter.

feta cheese crumbled

Add all tomato sauce ingredients except fresh mint, parsley, bay leaf and olive oil to a blender and purée until smooth.

Add olive oil to a large skillet over medium high heat. Pour in blended tomato sauce and the fresh mint, parsley and bay leaf.

Bring to a boil, reduce heat to simmer and cook for 10 minutes.

Add 1 cup of water, stirring to make sure the bottom does not scorch, and cook another 10 minutes. Sauce will reduce and thicken.

Tomato Sauce

Preheat oven to 425°F.

Grate remaining red onion half and add to a large bowl with the ground beef or lamb. Add remaining meatball ingredients and mix well by hand. Refrigerate to firm up, 15 minutes (optional).

Scoop about 2-3 tablespoons of meat mixture into wet hands and shape into football shaped meatballs. You should have between 12-16 meatballs.

Place in a greased baking dish and bake uncovered for 15 minutes. Top with tomato sauce and bake another 10 minutes. Top with feta cheese, chopped mint and serve.

Combine the peppers and walnuts in a food processor and blend until smooth. Add all of the remaining ingredients except the olive oil and pulse until smooth.&nbsp;

With the processor running, add the olive oil slowly and blend until the oil is completely incorporated. Turn off the processor and scrape down the sides of the processor bowl as you go.&nbsp;

Serve the muhammara in a small bowl, chilled or room temperature. Drizzle olive oil liberally over the top and finish with the chopped herbs.
