Microwave the large potato for nine minutes. A medium potato needs seven minutes and a small potato needs five minutes. To add extra potatoes allow an extra four minutes for a large potato, three minutes for a medium potato and two minutes for a small potato. This is using a 1000w microwave – adjust for slightly longer or shorter if yours is a higher or lower power. Don&#x27;t forget to pierce the potatoes with a fork a few times.

Chop the zucchini and bell pepper into small pieces and fry in oil for about six minutes.

While frying add the spices (or the fajita spice mix) and ⅛ cup water to the veg. Give it a good stir and add the corn for the last minute or so.

When ready, slice a deep groove through the middle of the potato in both directions. Repeat the process diagonally.

Season the potato with salt and pepper.

Pour the veggie medley over the potato.

Microwave Baked Potato

Pierce potato all over with a fork before placing it directly into the microwave. If cooking more than one potato at a time, make sure that the potatoes are in a single layer and not touching.

Cook the potato for 3 to 4 minutes and then carefully flip and cook for an additional 3 to 4 minutes. For every extra potato you&#039;re cooking, add 1 minute for each side.*

Use a knife to pierce the potato and check for doneness. The potato should feel tender (but not mushy) all the way through.

If the potato is finished, allow it to sit for 1 minute to cool slightly before removing it from the microwave. If still hard, continue to cook in 1-minute increments until the potato is tender.

Heat up the beans and lentils.

Add optional butter, salt and pepper to the potato.

Pour the hot beans and lentils over the potato when ready.

Add the cottage cheese on top.

Cut the potatoes in half and cut through the skin of the potatoes to make a few cuts across the potatoes (you have to pierce the potatoes through the skin a little, but not too deep).

Add the oil, garlic powder and salt and mix in with the potatoes.

Arrange the seasoned potatoes in a good quality microwave safe plate (do not use plastic plates or paper plates, I recommend using good quality microwaveable ceramic plates).

Microwave in high for 3 minutes.

Give a couple of minutes of cooling time, then flip the potatoes and microwave in high for another 3 more minutes.

After giving a cool off time again for a couple of minutes, microwave for another 1 more minute so the potatoes will turn soft and delicious with the perfect texture.

Allow the cooked potatoes to cool down as the potatoes will be really hot at this point, slightly slice and top with black pepper powder or add shredded cheese or butter (or any of your favorite seasonings), serve warm!

How Long to Microwave a Potato

Clean the potatoes under running water using a scrub brush. Trim away any blemishes.

Poke the potatoes 3-4 times about an inch deep using a small skewer, cake tester or fork. This important step helps steam to escape for even cooking.

Put the potatoes on a microwave-safe plate and place in the microwave. Cook on full power for 10 to 12 minutes (see notes for other potatoes).

Poke the potatoes with a fork to check they are tender. If not, cook longer in 1 minute increments until done.

As the plate will be hot, use oven mitts to remove it from the oven. Similarly, use kitchen tongs to transfer the potatoes to serving plates.

Carefully cut the potato open with a knife and fluff with a fork as desired. Add optional butter, sour cream, green onion/chives, salt and pepper to serve.
