Microwave Scrambled Eggs

Tbsp milk

salt and pepper

Spray a 10 - 12 oz. coffee mug with cooking spray or grease with butter.

Add eggs and milk to mug, season with salt and pepper and stir with a fork until well blended (be sure to break yolk or it can burst).

Microwave mixture on high for 40 seconds then stir edges inward. Microwave again for 20 seconds, stir again. Continue to microwave in 10 - 20 second intervals until just barely cooked through.

Serve warm.

Easy microwave egg in a cup (or mug or bowl) is a super quick breakfast. Cook 1.5-2 minutes for fluffy souffle-like eggs. Add whatever toppings you like for a quick tasty breakfast in less than 10 minutes from start to finish.

Fluffy Microwave Egg in a Cup

milk of choice

kosher salt and pepper (or to taste)

notes below for optional toppings

Crack 2-3 eggs into a microwave safe cup. Add 2 Tablespoons milk, beat with fork. Make sure it&#39;s only 1/2 full.

Add desired toppings such as cheese, protein, vegetables, etc. 

Place egg mixture in the microwave. Cook on high for 1.5-2 minutes. Stir and enjoy. If still really undercooked, cook another 30-45 seconds. If mostly cooked remove from microwave, it&#39;ll continue to cook just a bit. 

Top with sliced tomato, if desired. Enjoy.

Try adding some pesto to the bowl too.  It adds more calories but packs a boost of flavor too. Thank you for the recipe.
