<p>Migas - eggs scrambled with crispy tortillas, garlic, jalapeño, and melted cheese served with black beans and avocado. Quick, easy, and SO DELICIOUS. Breakfast, lunch, dinner, or brunch!</p>

Migas: All Day Every Day

butter

corn tortillas,

jalapeno, minced

garlic,

eggs, beaten

cheese

cilantro

salt

black beans, Cotija cheese, salt, pepper, avocado, tomato salsa

Heat the oil and butter in a large skillet over medium heat. Add the tortillas and fry, stirring frequently, until very browned and crispy (see picture).

Turn down the heat and let things cool down a little bit. Add the jalapeño and garlic. After a minute or two, add the eggs about 1/4 cup at a time, pushing the eggs around gently in the pan after each addition until all eggs have been added and all the eggs are almost all fully cooked but not quite. Season with salt.

Remove from heat (the eggs will finish cooking off the heat) and stir in the cheese and cilantro. Serve with all the usual suspects. Black beans, avocado, salsa, cheese, salt, pepper, or hot sauce.

oh my gosh. THIS is why Austin has been on my list of foodie places I NEED to go for like...as long as I have known about Austin.  So glad you good force details out of Bjork for this one...because it looks SO up my alley.

Try adding chorizo. My mom did everything you said from scratch, including making your own crispy tortilla, only difference (game changer for me) she always put chorizo in it. Give it a go!

The sauce is actually a salsa, red or green, your choice 

And they’re so much better with chorizo mixed in, not Spanish chorizo, which is more like a sausage link, but a Mexican chorizo that’s is more like a loose beef crumble but a mix of pork n beef.

As a Texan, migas are serious. I totally get ya on the all day every day vibe. I've actually whped up a batch with that sweet potato turkey chili you mentioned before, though that variation is more on the level of Chilaquilles (so worth investigating further *hint)

I've never tried making migas but this looks great and simple to make! Plus it's fun to say migaaaas!

These Austin-style migas are a fun breakfast or brunch!

olive oil

red onion

tomatoes

jalapeño

garlic (finely chopped)

eggs (beaten)

tortilla chips

jack cheese

Sea salt and black pepper

tortillas (charred)

Avocado slices

Lime wedges

Salsa Salsa

Heat the oil in a medium nonstick skillet over medium heat. Add the onion, tomato, jalapeño, garlic, ¼ teaspoon sea salt, and several grinds of fresh pepper. Cook for 2 minutes, stirring, until softened. Add the eggs and crumbled chips and stir to scramble. Stir in cheese and remove from the skillet.

Sprinkle with cilantro, season to taste with more salt and pepper, and serve with tortillas, avocado slices, lime wedges, and salsa.

Migas, aka the best Mexican or tex-mex breakfast ever, made with eggs, corn tortillas, onion, bell pepper, and chili powder. Serve with cheese and salsa!

Easy Migas Recipe

canola oil

onion,

green bell pepper, diced

eggs, scrambled

tsp chilli powder

Monterey jack cheese

cilantro minced,

cotija

pico

avocado

Heat the canola oil in a skillet over medium-high heat

When the oil is hot add the tortilla strips and fry until crispy, stirring regularly, about 5 minutes

Set crispy tortilla strips aside onto a paper towel lined plate.Add the onion and bell pepper to the same pan

Add the garlic and sauté for 1 minute longer

Beat the eggs with the chili powder and salt

If you need to, add a bit more oil at this point to avoid the eggs sticking to the pan

Once the extra bit of oil has heated, add the eggs to the pan

When the eggs are halfway cooked (still glistening, but less wet) add in the cilantro, Monterey jack cheese and tortilla strips

Cook until eggs are fully cooked then remove the pan from the heat

Garnish with cotija (or your favorite cheese), pico (or salsa), avocado and extra cilantro!

Start your day off right with this protein loaded breakfast

How to Make Vegan Migas

oz of silkened extra firm tofu

sea salt salt

turmeric powder

onion

garlic (minced)

green serrano pepper (thinly sliced)

corn tortilla chips*

refried beans

Chop up the tofu into small pieces, heat the oil in a large pan then add the tofu and saute for a couple of minutes before mixing in the salt. Next, sprinkle in the turmeric powder and saute for 5 minutes. Then remove the tofu from the pan and set aside. Add the onion to the pan and if needed add a splash of olive oil, cook onion until soft. Mix in the garlic then add the serrano slices and then the chopped tomato. Cook until the tomato has begun breaking down, then mix in the cooked tofu and stir until well combined. Add the corn chips and stir until they are coated with the tofu mixture. Cook until the chips have softened. Serve with refried beans, salsa, and/or avocado slices. Enjoy as breakfast, or lunch or brunch or even dinner.

Migas is a popular Tex Mex egg dish made with chopped corn tortillas, cheese, tomatoes, jalapeños, and onions. I serve it plated with tortillas on the side, but they can also be wrapped in a tortilla, taco style.

Tex-Mex Migas

tomato

jalapeño (half diced, half sliced thin for garnish)

chopped cilantro (plus more for garnish)

corn tortillas

kosher salt and black pepper (to taste)

eggs

queso fresco

avocado (sliced)

hot sauce or salsa (for serving)

One at a time, place all 6 of the tortillas directly over the flame of the burner over medium heat 20 to 30 seconds per side, until slightly charred.

Set 4 aside on a plate with a dish towel over them to keep them warm until ready to serve, cut the remaining 2 in half, then chop into 1/2 inch thick strips.

Place the eggs in a medium bowl, season with salt and pepper, and whisk to combine.

Heat 1 teaspoon of the oil in a 10-inch nonstick skillet over medium heat.

Add the 2 chopped tortillas and cook, stirring until crisp, about 4 minutes. Set aside.

Add the remaining oil to the skillet, then add the onion, tomato, jalapeño, cilantro and season with salt and pepper, cook until soft and translucent, about 4 minutes stirring.

When the onion is ready add the eggs and cook 3 to 4 minutes until the eggs are almost set, stirring a few times to scramble, then stir in the tortillas.

Stir and cook 1 more minute. Remove from heat and top with cheese, fresh salsa, avocado, hot sauce and cilantro for garnish.

Serve with warmed tortillas.
