Looking for an easy pantry meal? Try miso butter noodles with nutritional yeast – made with five ingredients and ready to eat in just 20 minutes. 

Miso Butter Noodles with Nutritional Yeast

lb cavatappi noodles ((or other pasta of your choice))

tsp sea salt

Tbsp vegan butter ((I used Earth Balance buttery sticks))

Tbsp white miso

yeast

scallions

cracked pepper ((optional))

Boil

Add salt to pot of boiling water and cook pasta until al denté. Before straining, reserve 1 cup of pasta water. Then, strain and set aside.

Whisk

In a saucepan, add reserved pasta water, vegan butter, and miso. Whisk until combined, then bring to a low simmer for 2 minutes. Add the nutritional yeast, and whisk to combine. Continue simmering for another 3 minutes.

Add the miso butter sauce to the pasta and toss to combine. Serve with scallions and fresh cracked pepper.

Sesame Miso Butter Udon Noodles

bundle of frozen udon noodles (about 200 grams)

garlic clove,

butter

tsp sugar (4 grams)

tsp miso paste (10 grams)

soy sauce

corn (50 grams)

lettuce or cabbage (80 grams)

togarashi

nori,

scallions,

Place udon noodles into a bowl and microwave until 75% thawed and warmed (about 2 minutes total at 600W).

In the meantime, grind 1 1/2 tbsp toasted sesame seeds (this step is optional but it brings out the sesame flavour more).

Add garlic, vegan butter, miso paste, soy sauce, ground up sesame seeds, sugar and corn. Mix everything well and then microwave for another minute.

Top with togarashi, nori and scallions. Enjoy!

This was so delicious and so easy. I can't get frozen udon where I live so I just used the packaged kind and cooked them on the stove before mixing the rest of the ingredients in the pan and heating through. I used barley miso &amp; I can't wait to try it with all of the other miso in the house!

Fantastic ! Don’t skip the grinding of the toasted sesame seeds, the smell is divine while you’re grinding and it really adds a great nutty element to the dish. 
Did it in a pan, added a mix of pre browned mushrooms, reduced the sugar and the togarashi topping is non negotiable !

These easy miso butter noodles are ready in about 10 minutes! The creamy sauce is mild in flavor but so satisfying. Best when made with frozen udon noodles!

Miso Butter Noodles

block frozen udon noodles (~9 oz each, see notes for substitutions)

tbsp butter

tbsp white miso paste (also called shiro miso)

tsp garlic

green onion

sesame seeds (for topping, or nori furikake)

tsp corn starch (to thicken sauce)

water

salt (to taste)

Begin boiling a pot of water for the noodles. Cook the noodles per package instructions as you prepare the sauce. (Frozen udon only needs a few minutes to cook, so I add them to the water when the sauce is almost ready.)

Thinly slice the green onion, and separate the white and green portions. Dissolve the corn starch in the warm water.

Set a skillet over medium to medium-low heat. Once hot, add the butter. Once the butter has melted, add the garlic and the white portions of the green onion. Cook, stirring frequently, until very fragrant, about 1-2 minutes.

Add the miso paste to the skillet and mix vigorously until the miso is fully incorporated into the sauce. This step can be a little difficult, I like to use a flat whisk to make it easier.

Once the miso is fully incorporated, turn off the heat and whisk in the corn starch and water mixture. If the sauce is too thick, you can add a little more water, one tablespoon at a time. If the sauce is too thin, put the skillet back over medium low heat and reduce until the desired consistency is reached. Taste the sauce and season with a little salt if desired.

Add the drained noodles to the skillet and toss until they&#39;re fully coated in sauce. Transfer to your serving dish, top with sesame seeds and green onion, then serve.
