Marinated in a sweet and savory miso sauce, this Miso Salmon recipe makes a delicious weeknight meal. Enjoy with Japanese ginger rice!

Miso Salmon

oz salmon g;

Tbsp miso ((White Miso

Tbsp sake

mirin

soy sauce

¼ tsp sesame oil (roasted)

½ tsp toasted white and black sesame seeds ((optional))

green onion/scallion ((optional, for garnish))

Gather all the ingredients.

Mix all the ingredients for the marinade in a large bowl or flat tray.

Place the salmon in the bowl, skin side up. Spoon marinade and coat the salmon skin. Cover and keep in the refrigerator for 30 minutes to 1 hour. I don’t recommend longer than that as miso is quite salty.

Line a baking sheet with foil (for broil) or parchment paper (for baking). As miso gets burnt easily, remove excess marinade completely from the salmon and place it on the foil/parchment paper.

Preheat the broiler* with a rack placed about 6&quot; (15 cm) away from the top heating element (in the middle), for 3 minutes. Broil medium/high for 10-12 minutes, depending on the thickness of the salmon, until it is a minimum internal temperature of 145°F/63ºC at the thickest part of the fillet. You do not need to flip it. *Broiler typically ranges from Medium/500ºF/260ºC to High/550ºF/288ºC.

To Broil (Recommended)

Preheat the oven to 425°F/218ºC with a rack placed in the middle and bake for 10-12 minutes, you do not need to flip it. Good to remember 5 minutes per 1/2-inch thickness of salmon (measure at the thickest).

To Bake (Optional)

I served the salmon on top of the Ginger Rice. Top the salmon with sesame seeds and thinly sliced scallion.

First sprinkle a pinch of salt over both sides of two pieces of salmon. (This is to help draw out the moisture.)

Mix 100g miso paste, 2 tbsp sake, 1 tsp mirin and 1 tbsp sugar together until smooth.

Put the salmon and asparagus into the mixture. Make sure everything is fully covered. (I use a ziplock bag to massage the sauce into the salmon and asparagus without getting my hands messy.)

Leave it to marinate for approximately 6 hours. Some recipes recommend marinating for two days if you like an especially rich flavour but we're not that patient and 6 hours produces a perfectly delicious result.

After the marinating period is up, take the salmon and asparagus out of the mixture and wipe it off using a paper towel. Make sure not to wash it with water, we want some residue from the marinade on the surface of the salmon and asparagus.

If you're using daikon, take a small piece and grate it. This is to eat together with the salmon.

Add 1 tbsp of vegetable oil to a pan and heat on low.

Place the salmon in the pan, skin side touching the bottom first. Add the asparagus too.

Fry for about 4 mins and flip the salmon, roll the asparagus onto it's opposite side to ensure even cooking. (Add an extra minute or so for thicker cuts of salmon.)

Cook for another 3 mins on the other side. The miso marinade left over on the surface of the salmon and asparagus should be a little caramelized or burnt looking, do not fear, it's supposed to be like that!

Best served with rice. I recommend serving as a Japanese teishoku meal set with miso soup, salad and pickles.

How to make Miso Glazed Salmon (Teishoku Style)

My Miso Pickled Vegetables (Vegetable Misozuke) are slightly different from most Misozuke recipes you might know of. The traditional miso pickling base is made of miso with a small amount of mirin. But my marinade contains a substantial amount of yoghurt which gives a milder saltiness to the pickled vegetables.I did not include Meal Ideas today because today&#39;s dish can go with almost anything as a side dish, or even nibbles.

Miso Pickled Vegetables (Vegetable Misozuke)

cucumber ((about 140 grams/4.9 ounces))

daikon ((white radish))

carrot

tbsp miso ((note 2))

tbsp Greek yoghurt ((note 3))

Trim both ends of the cucumber.

Halve the daikon and carrot vertically to make half-cylindrical shapes.

Mix the Misodoko ingredients well in a bowl, until lump free.

Put the misodoko in a ziplock bag.

Put the vegetables in the bag and massage gently, ensuring that all the vegetable pieces are coated in the misodoko.

Remove the air inside the bag as much as possible, then seal it.

Leave the bag in the fridge for at least 24 hours, up to 3 days (note 5).

Remove the vegetables from the bag, scraping off the misodoko as much as possible.

Rinse off the miso around the vegetables, pat dry, then slice them into 5-7mm/3⁄16-¼&quot; thick pieces.

Serving

8-Minute Broiled Miso Salmon! (Tender & Flaky)

Tbsp low-sodium soy sauce (or tamari, if gluten-free)

Tbsp sesame oil

tsp ginger paste (or fresh chopped ginger)

scallions, black and white sesame seeds, and cilantro

Make the marinade. Place ¼ cup white miso paste, ¼ cup granulated sugar, ¼ cup mirin, 2 Tbsp soy sauce, 1 Tbsp sesame oil, and 2 tsp ginger paste in a mixing bowl, then whisk well.

Marinate the salmon. Place salmon fillets in a large tupperware or in a large Ziplock bag. Reserve 2 Tbsp marinade, then pour the rest on top of the fish. Seal, then marinate for 30 minutes.

Cook the salmon. When ready, preheat the broiler to high, then coat a sheet of parchment with cooking spray. Make sure the parchment lies flat so that it doesn&#39;t touch the heating unit once in the oven. Place the marinated salmon fillets skin side down, allowing excess marinade to drip off. If the marinade is thick, you can rub the excess marinade off with your hands, then place the fillets on the sheet pan. Broil the salmon for 6-8 minutes, rotating the pan once halfway through, or until the internal temperature of the fish reaches 120F.

Finish, then serve. Brush the fillets with the remaining marinade, then serve immediately with thinly sliced scallions, sesame seeds, and fresh cilantro.

Tender and flavoursome Pork Marinated in Miso takes no time to make. The marinating time is anywhere between 3-48 hours. Then, simply BBQ or grill the meat. The recipe calls for thinly sliced pork belly, but sliced pork loin works well too.Total Time does not include the time to marinate.

Add the Miso Marinade ingredients to a bowl and mix well.

Put the pork slices in a zip lock plastic bag and pour the marinade into the bag (note 4).

Massage well ensuring that the miso marinade coats every piece of pork.

Remove as much air as possible from the plastic bag, seal it, and leave in the fridge for minimum 3 hours up to 48 hours.

Marinating

Oil a griddle or BBQ and heat it over medium high heat.

If excessive amount of miso marinade is on the pork slice, scrape it off as the sweet miso can burn quickly.

Place pork slices on the griddle/BBQ and cook for 1-2 minutes until the outer edge of the pork piece becomes whitish.

Turn it over and cook another minute or so, then transfer to a plate.

Serve with green salad and tomatoes if using.

Grilling

Hi guys in america the cut you used besides the pork belly is usually called pork sirloin from what I saw in your photo, it's not Boston butte or shoulder, which I believe may be the same thing, just gotta love creative meat naming in the butcher world, it's a bit marbled but not that fatty and once marinated pretty tender off the grill, the griddle, the fry pan and even on skewers off a hibachi, plus it's usually pretty cheap, I would not do this with pork loin or pork tenderloin. I've used miso marinade on ribeye steaks on the grill and man the flavor, I used a shiitake dashi for the liquid and a little sake,because everything's better with booze. I'm trying this this week.

An excellent recipe. Marinated for 2 days and cooked on a stove top grill pan. Very tender and delicious. Such an easy meal to prepare quickly and then enjoy for dinner later. Went nicely with miso soup, pickled daikon, cabbage and rice. Thank you- will be making often.

I like your blog very much, but with all due respect, this recipe is tooooooo fatty for anyone to eat who wants to live much longer. I know you mentioned pork loin but I think you meant shoulder or butt, because they are quite fatty also. This recipe would never work with pork tenderloin unless cooked on a griddle. Thank you.
