Peanut butter oatmeal cookies packed with M&amp;M&#039;s and chocolate chips. These monster cookies are incredibly soft, chewy, thick, and so easy to make!

Soft and Chewy Monster Cookies

(125 grams) all-purpose flour

(125 grams) old-fashioned rolled oats

baking soda

salt

(115 grams) unsalted butter (, softened)

(150 grams) brown sugar (, lightly packed)

(50 grams) granulated sugar

(125 grams) creamy peanut butter

egg (, room temperature)

vanilla extract

(150 grams) M&M's

(95 grams) semi-sweet chocolate chips

Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats and set aside.

In a large mixing bowl, whisk together the flour, old-fashioned rolled oats, baking soda, and salt. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld mixer, cream together the butter, brown sugar, and granulated sugar for about 1-2 minutes or until well combined. Mix in the peanut butter, egg, and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed.

Slowly mix in the dry ingredients until just combined. Add the M&amp;M&#039;s and chocolate chips and gently fold them into the cookie dough.

Using a 1.5 tablespoon cookie scoop, scoop balls of cookie dough onto the prepared baking sheets, making sure to leave a little room between each one.

Bake in separate batches at 350°F (177°C) for 10-12 minutes or until the tops of the cookies are set. Remove from the oven and allow to cool on the baking sheet for 5-10 minutes, then transfer to a wire rack to cool completely.&nbsp;

Preheat the oven to 325F and line a baking sheet with parchement paper then set aside.

In a large mixing bowl or a stand mixer bowl, cream the cold butter, granulated sugar, and brown sugar together until light and creamy.

Add in the egg, and vanilla extract, and mix until combined.

Sift in the flour, baking soda, and salt and mix just until the flour mixture disappears. Add in the  M&amp;M&#39;s, peanut butter chips, and chocolate chips and gently fold.

Using a large cookie scooper, scoop out 8 equally sized cookie dough balls, place them on a baking sheet, and gently press down to about 1 inch in thickness. Bake in the preheated oven for 12-13 minutes.

As soon as you pull out the cookies from the oven, top with a few extra chocolate chips, Peanut butter chips, and M&amp;M&#39;s, and let the cookie rest on the baking sheet for 20 minutes or until fully cooled down to set before enjoying them.

Preheat oven to 350°. Line cookie sheets with parchment paper, use a silpat liner, or spray with cooking spray.

In a large bowl (or bowl of a stand mixer) cream together the butter, brown sugar, and peanut butter until light and fluffy, about 1-2 minutes.

Mix in the egg and vanilla, scraping down the sides of the bowl as needed.

In a separate bowl, add the flour, baking soda, cornstarch, baking powder, and salt and whisk to combine.

With the mixer on low speed, slowly add the flour mixture to the wet ingredients and mix until just combined.

Add the oats, chocolate chips, and M&amp;M candies. Mix on low speed just until dough is combined.

Use a medium cookie scoop, or about 2 tablespoons cookie dough, and place on the baking sheets. They should look like golf balls. 

Bake the cookies for 7-9 minutes until the edges are just starting to brown and the top still looks slightly undercooked.

Remove from the oven and cool for 5 minutes on the baking sheet before moving them to a wire rack to cool completely.

** These cookies don&#39;t spread much after baking. If you gently press additional m&amp;m&#39;s onto the tops of each cookie that will help flatten the cookie to more of a &quot;cookie shape&quot;. You can also tap the hot cookie sheet against the countertop or stove top to help the cookies to fall.

1. Grease a 9 inch pie pan and preheat oven to 350 degrees.

2. To make cookie dough, cream butter and sugars together until light and fluffy, about 3-4 minutes.

3. Mix in peanut butter, eggs and vanilla extract.

4. Add oats, flour, baking soda and making powder and mix until combined.

5. Stir in M&amp;Ms and chocolate chips. Set cookie dough aside.

6. To make cheesecake, beat cream cheese, brown sugar and peanut butter until smooth.

7. Add egg and milk and beat until combined.

8. Press about 3/4 of cookie dough evenly into the pie pan and up the sides.

9. Spread cheesecake mixture evenly over cookie dough.

10. Spread remaining cookie dough on top by dropping spoonfuls of cookie dough on top of cheesecake.

12. Bake for 20-25 minutes, then refrigerate until firm.

13. To make icing, cream butter until smooth.

14. Add peanut butter and mix until smooth.

15. Add powdered sugar and mix until smooth.

16. Add water or milk as needed to get the right consistency for the icing.

17. Pipe icing around the edges of the pie.

18. Serve with chocolate sauce, if desired.

These monster cookies definitely live up to the name! They're thick, soft, and loaded with M&amp;M's and chocolate chips. This recipe even includes a secret ingredient to enhance the flavor and texture. These can also be made regular or vegan!

Preheat the oven to 350F and line a large baking sheet with parchment paper.

Combine the oats, flour, baking soda, and salt in a small bowl and set aside.

In a large mixing bowl with a hand or stand mixer, cream together the butter, peanut butter, and sugar on medium-high speed for a couple minutes until light and fluffy. (see picture in post for reference). Scrape down the bowl.

Mix in the vanilla, molasses, and egg until fully combined. Scrape down the bowl and give it another mix.

Toss in the dry ingredients and mix just until the dough comes together. Remove from the mixer and fold in the M&amp;M&#8217;s and chocolate chips using a rubber spatula.

Using a large cookie scoop (2oz) scoop 5-6 cookies onto the baking sheet. Bake for 15-18 minutes or until lightly golden around the edges. If using a regular cookie scoop, bake for 12-15 minutes.

Let the cookies rest on the baking sheet or a couple minutes, then transfer the cookies to a cooling rack.

Baking these now! Mine are a little smaller and look more puffy, but delicious and super easy to bake!

These were great! Definitely pull them out at the 15/16 minute mark even if you think they aren't quite done... they shift to overcooked quickly!  We just cooked what we could eat as they came out of the oven and froze the rest (and have already defrosted and cooked some of these) -- super easy!  In these days of quarantine we didn't have molasses but maple syrup seemed to work perfectly as an on-hand alternative.  YUM.

These cookies are perfect.  I didnt have peanut butter, and as I wanted to make as soon as I saw the recipe, I replaced with almond butter.   I feel like the little bit of molasses took these cookies to another level.  Thank you for also including weight measurements for the recipe.  Using a scale is so much quicker and precise.  Definitely will be making these again.

Served these for my sister’s engagement party and they were a hit! We called them “everything cookies” because they have a little bit of everything everyone loves in a cookie. Perfectly crispy on the outside and chewy on the inside too! Loved it.
