A simple healthy salmon recipe with Moroccan spices. Serve this with Moroccan Quinoa with oranges, almonds olives and mint, or Moroccan Couscous. Fast and easy!

Moroccan Salmon

salmon

cinnamon

cumin

salt

sugar (or brown sugar)

cayenne paprika

Garnish- orange zest

In a small bowl, combine cinnamon, cumin, salt, sugar and cayenne.

Heat oil in an oven-proof skillet (cast iron) over medium-high heat. Sear salmon on both sides 2 minutes on each side then place in the warm oven to finish for 5 minutes or to desired doneness.

Wonderful recipe... appreciate the instructions specific to searing the salmon and then finishing the cooking in the warm oven. Worked beautifully to perfectly cook the fish. You must make this with the incredible quinoa recipe... added some chopped dates and substituted  toasted pistachios for the almonds and used  a pink red type of orange  because my market did not have blood oranges; it came out  unusual and really tastey!

Delicious and super super easy! Couldn't believe how fast this came together. I may have overcooked it by a minute or so, probably just bc of the thinner cut of my fish - so may be worth checking a minute or two before time is up. Still tasty and I'll definitely make this again :)

I'm definitely going to make this dish. I have everything on hand, and I love mixing up new spice rubs. I'll have to sub Valencia oranges for the blood oranges, but I'm sure that will be fine.

This Pomegranate Salmon recipe is so festive and delicious! Inspired by the flavors of Morocco, it is very easy to make, and worthy of your holiday table.

Pomegranate Salmon Recipe

olive oil

shallots-

fennel bulbs- very thinly sliced

white wine

salt and pepper

miso paste

maple syrup

garlic cloves, finely minced

Pomegranate molasses (see notes for homemade version)

salt and black pepper

Make the salmon marinade by whisking marinade ingredients together in a small bowl. Pour over the salmon, coating it well. Let marinate 15 minutes or up to 24 hours(refrigerated)

Braise the fennel. Heat olive oil over medium high in an extra large skillet. Saute the fennel bulb and shallots for 4-5 minutes, stirring, until golden and slightly tender, you may need to turn heat down. Splash with wine and season generously with salt and pepper. Simmer gently until wine has evaporated. Let it finish cooking in the oven with the salmon.

Place the salmon in the oven to roast- either in the pan, over the braised fennel, or separately on a parchement lined baking sheet. Depending on the size, thickness and the way the salmon is cut, cooking time will vary. For individual portions, check after 10 minutes. Whole filets will most likely take 15 minutes, and extra large thick filets, even longer. Better to err on the side of under than over, so set a timer.

When the salmon is done, scatter with pomegranate seeds and fresh herbs for color.
