This easy no bake Choc Chip Muesli Bars recipe takes no time at all to make and is the perfect snack for the kids. Both regular and Thermomix instructions included.

No Bake Choc Chip Muesli Bars

rolled oats

puffed rice

butter

brown sugar

honey

cinnamon

tsp vanilla extract

chocolate chips

Line a 18 x 28cm slice tin with baking paper and set aside until needed.

Place the butter, brown sugar and honey into a small saucepan and cook over a low heat for 10 minutes or until the mixture thickens.

In the meantime, place the oats, puffed rice and cinnamon into a large bowl and gently stir to combine.

Add the vanilla extract to the cooked honey mixture and stir well before adding to the bowl with the dry ingredients and stirring through until well combined.

Pour the mixture into your prepared slice tin and use the back of a spoon to push it firmly down to flatten the surface.

Sprinkle the chocolate chips over the top of the slice and gently press them into the slice.

Transfer to the fridge to chill for six hours (preferably overnight) before cutting into bars.

Soft and chewy, with just a bit of crunch, these muesli bars make a mighty satisfying breakfast or snack.

Muesli bars with honey and seeds

unsalted butter

natural almond butter (see tips above)

brown or coconut sugar

Preheat the oven to 180˚C (or 160˚C fan). Line an 18cm x 23cm baking tray (one with raised sides — see tips above) with baking paper.

Lightly toast the pepitas in a skillet over low heat, shaking the pan every now and then (this should take 5–10 minutes).

Meanwhile, place the oats, hemp seeds and salt in a large mixing bowl. Once the pepitas are toasted, add them to the mixing bowl.

Melt the butter in a small saucepan over low heat. Turn the heat off and add the almond butter, stirring well (the warmed butter should help melt any lumps present in the almond butter). Add the sugar and honey and stir well.

Pour the butter and honey mixture over the oats. Stir well to combine.

Tip the mixture into the prepared baking tray and pack tightly by pressing down firmly with a silicone spatula or the back of a large spoon (moisten the spatula/spoon with water to help stop the mixture sticking).

Bake in the oven for 18–22 minutes until golden (the edges will be darker than the middle, but you want some golden colour across the middle).

Remove the bars from the oven and allow them to cool completely in the pan (1–2 hours) before slicing into bars. Store in the fridge (wrapped tightly or in an airtight container) for up to five days.

Recipe video above. These are chewy, no-bake muesli bars that will keep for 2 weeks. Cheaper, tastier and much healthier than store-bought, it&#39;s also an excellent way to clear out random leftover nuts and dried fruit. Just stick to the recipe ratio of &quot;glue&quot; to add-ins (3 1/2 cups total). My combination is a dead-ringer for Australia&#39;s popular Carmen&#39;s Classic Fruit &amp; Nut Muesli Bars (which cost $6.50 for 6!).

Muesli bars (granola bars)

(120 grams) pure natural peanut butter, smooth,

(175 g) honey ((Note 2))

(175 grams) rolled oats

sultanas ((160 grams))

desiccated coconut (, unsweetened (25 grams))

almonds (, very roughly chopped (80 grams))

pepitas ((40 grams))

tbsp white sesame seeds

salt

Mix Add-ins - Using a wooden spoon, mix the add-ins in a large microwaveable bowl (just in case, Note 4).

Glue - Using a rubber spatula, mix the peanut butter and honey in a saucepan over medium heat until smooth. Once combined, turn the stove down to low. As soon as you start seeing little bubbles around the edges, cook for 5 minutes, stirring constantly scraping the base, until it is like a very thick caramel (see photos and video in post). You should be able to draw a path across the base and it holds before closing in on itself. DO NOT WALK AWAY, it will catch easily. (Note 5)

Mix - Immediately pour it all over surface of the oats etc then mix with the wooden spoon. It takes a bit of effort but it does come together eventually. Stabbing and smearing against the wall of the bowl helps. If it gets too thick, microwave for 20 seconds on high to loosen the glue then mix (then it&#39;s a breeze!).

Press - Put a square piece of paper over a 20cm/8&quot; square tin (no need to grease). Drop muesli mix in then spread right into the corners, using a combination of your hands and the wooden spoon. Firmer press = chewier muesli bars.

Set - Refrigerate 2 hours until firm then cut into 10 bars (cut in half, then each half into 5).

Recipe video above. I&#39;ve never come across a crunchy muesli bar recipe that stayed crunchy beyond a day. So I decided to make my own - and these stay crunchy for 3+ weeks! Adapted from my chewy muesli bars, I found the key to be lightly toasting the oats then cutting the bars before baking. The chewy muesli bars also have a higher ratio of honey and peanut butter which is what makes them chewy!PS Even though they&#39;re sugar free, I munch on these when I need a sweet-treat fix, yet they&#39;re healthy enough for breakfast.

Crunchy muesli bars (granola bars)

honey ((Note 1))

peanut butter, smooth ((or crunchy!) (Note 2))

rolled oats* ((not steel cut))

almonds* (, roughly chopped)

pepitas* ((pumpkin seeds))

sultanas*

cinnamon powder ((or other, like pumpkin spice))

tsp cooking / kosher salt

Preheat the oven to 160°C/325°F (140°C fan-forced). Place a sheet of baking paper over a 20 cm / 8&quot; square tin with overhang so it&#39;s easy to lift out later (no greasing needed).

Toast: Spread the oats, chopped almonds and pepitas on a tray. Bake for 10 minutes. Tip into a heatproof bowl. (Note 5) Add the sultanas, cinnamon and salt.

Muesli mixture: Microwave the honey and peanut butter in a heatproof jug for 30 seconds on high. Mix to combine. (Note 6) Pour over the oat mixture and mix through. It might seem like it won&#39;t mix in, but persist, it will! Use a cutting motion if needed. Last resort - Note 7

Press: Tip the muesli mixture into the pan then press firmly into the pan. Once cooled, scatter the choc chips across surface (if using). Cover with a sheet of paper then press down firmly with your hands to push the choc chips in.

Refrigerate for 1 hour or until firm enough to lift out without bending.

Preheat the oven to 160°C/325°F (140°C fan-forced).

Cut: Use the paper overhang to lift the muesli slab onto a cutting board. Cut in half, then each into 5 (10 bars). Transfer onto a tray using the paper, then space the muesli bars out.

Bake for 25 minutes or until quite golden on the surface and golden brown on the edges but not burnt.

Cool &amp; crunchy: Remove from the oven and cool on the tray - it will become crunchy! Store in an airtight container once cooled, in the fridge if it&#39;s warm where you are. It will still be crunchy 3 weeks later!

High in fibre and low in saturated fat, these healthier muesli bars make a great lunchbox filler.

Oat and mixed berry muesli bars recipe

vegetable oil

4.40 gm vanilla extract

90.00 gm firmly packed brown sugar

375.00 ml wholemeal plain flour

150.00 gm traditional rolled oats

2.50 gm mixed spice

1.25 gm bicarbonate of soda

82.50 ml dried cranberries

raspberries

Step 1

Preheat oven to 190C/170C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 3cm above long sides.

Step 2

Whisk oil, honey, vanilla and egg in a jug. Combine sugar, our, oats, mixed spice and bicarbonate of soda in a bowl. Make a well in the centre. Add oil mixture. Stir to combine.

Step 3

Press two-thirds of the oat mixture evenly over base of prepared pan. Sprinkle with cranberries, raspberries and remaining oat mixture. Bake for 20 to 25 minutes or until golden and set. Cool completely in pan. Cut into bars. Serve.
