Make 4 pieces of each cheese slice and keep on a plate.

Apply butter to pav/white rolls and roast them on medium heat (inner side down) till golden brown.

Flip them over and place cheese pieces and cook for another minute. Then keep aside.

Add butter, onions, green chillies, salt and mix well.

Break 2 eggs and sprinkle salt, onions, red chilli flakes, cheddar cheese and cilantro.

Cover and cook on low heat till egg white is just done.

Remove the lid, loosen edges and place the eggs on pav/white rolls.

Egg white should be completely cooked and egg yolk should be runny.

If you do not prefer runny yolk, cook eggs a bit longer till yolk is completely cooked.

An easy one-pot recipe for the most popular Indian street food, Pav Bhaji in Instant Pot. It is a spiced mashed vegetable curry topped with chopped onions, cilantro, lime and enjoyed with dinner rolls. 

Mumbai Pav Bhaji Recipe (One-pot)

Red Onions (diced)

Tomato (chopped, about 5 large)

1" inch Ginger

Garlic

Whole Dried Kashmiri Red Chili Pepper

Bell pepper (chopped, 130 gramsms)

Carrot (cut in pieces, 90 gramsms or 2/3 cup)

Cauliflower (Gobi) (cut in small pieces)

Green peas

Water

Pav Bhaji Masala

Salt (or

Lime juice

Dinner rolls (Pav) (or Dinner rolls)

Onion (chopped)

Cilantro (to garnish)

Soak red whole chili in 1 cup water for 15 mins.  Grind chili, ginger and garlic along with the water to a paste. (Note: if you skip grinding chilies with water, then do add 1 cup water before pressure cooking and add the ginger/garlic along with the onions)

Start the pressure cooker in sauté mode (high flame for stovetop pressure cooker) and heat 2 tbsp butter/oil in it.  Add onions and sauté for 3 minutes.

Add bell pepper and sauté for another 2 minutes.

Add tomatoes, pav bhaji masala and salt.  Add the ground chili paste. If anything is stuck to the bottom of the pot, scrape it with a spatula. (See notes if you have had a Burn issue in your instant pot or using 8qt instant pot)

Add cauliflower, potatoes, carrots, and green peas. Mix well.

Press cancel and close lid with vent in sealing position. Change the setting to manual or pressure cook mode at high pressure for 8 minutes. When the instant pot beeps, release the pressure naturally.

Instant Pot Method

Close the lid, turn the heat on high flame and pressure cook it until your hear two whistles. Now reduce the flame to medium and pressure cook it for another 6 minutes. Turn off heat. Let the pressure release naturally.

Stovetop Pressure Cooker Method

Open the pressure cooker and use an immersion blender to coarsely grind the ingredients. You can also use a potato masher to mash the bhaji to the desired consistency. 

Change to sauté mode and let the bhaji boil for a minute.  Mix in the lime juice. Bhaji is ready to be served.

Mash and Garnish Bhaji

Slice each pav or dinner rolls in two halves.

Heat butter on a pan and place the sliced pav on it.  Lightly toast on one side and then turn to toast on the other side.&nbsp;

Pav are ready to be served with bhaji.

Preparing Pav

Take 1-2 ladles of bhaji in a plate. Add a dollop of butter. Sprinkle some chopped onions and cilantro on the top. Sprinkle some lime juice on the top if you like a tangier taste. Serve with two buttered pav&#039;s on the side. 

Serving Pav Bhaji

Tawa pulao is a popular Indian street food, and is also known as Pav Bhaji Pulao. In this Mumbai style tawa pulao, cooked rice and vegetables are stir fried in butter, pav bhaji masala and with other spices and herbs. This easy recipe can be made quickly using leftover rice.

Tawa Pulao Recipe

rice (sella basmati)

water

red chilies (dry kashmiri)

garlic

butter

cumin seeds

onion

ginger (puree)

garlic (puree)

bell pepper (green capsicum)

tomato (cut)

mix vegetables (steamed - carrots,green peas, cauliflower)

potato (boiled, peeled and cut)

cabbage (cut)

pav bhaji masala

chili powder (kashmiri - optional)

turmeric powder

salt (to taste)

fenugreek leaves (kasoori methi)

lemon juice

coriander/cilantro (chopped)

wedges lemon (optional)

First make chili garlic paste. Soak dried chilies in hot boiling water in a bowl for at least 30 minutes.

Rinse the rice in clear running water until waterturns clear. Soak washed rice in a bowl with cold tap water at least 20-25 minutes.

Once chillies are soaked and hydrated, drain the water. Remove stem and add in the blender jar with garlic cloves. If you want less spicy paste, remove the seeds from the chili.

Add very little water (2 tablespoon max) and blend until you have smooth thick paste. Leave it aside.

Chili Garlic Paste and Soak Rice

In a big pot or pan add water, add a tiny pinch of salt and few drops og oil.

Bring it to roaring boil, drain the water from the soaked rice.

Add soaked rice into the boiling water.

Keep heat on high. Do not cover the pan at all whilst rice is cooking.

Cook rice until 95% done, rememeber not overcook the rice.

Drain the water from the rice using a strainer. Leave it aside to cool at room temeprature.

After a couple of minutes spread it in the big plate/tray to cool completely in less time.

Cook Rice

In a frying pan, wok or large tawa add butter and oil on medium flame.

Let the butter melt, then add cumin seeds.

Once cumin seeds splutter, add onion slices to it.

Fry the onions until light pink and translucents on mefium-high heat. It will take approximate 2 minutes or less.

Then add ginger-garlic puree and chili garlic paste according to your taste that you have prepared using soaked chillies. (Do not add all the chili garlic paste) I added 1 tablespoon and it was spicy enough for us.

Cook the paste and onion mixture for 1 minute or so.

Now add chopped tomatoes and capsicum, mix well and cook for 1 minute.

Add remaining vegetables, stir and cook for 2 minutes on medium-high heat.

Tip in pav bhaji masala, chili powder and turmeric powder and mix everything and cook everything further for 1 minute.

Add prepared rice and salt (it will be around 3 cups cooked rice) and mix with spices and vegetables. Mix gently on medium heat.

Sprinkle crushed kasoori methi, coriander and lemon juice and mix well.

Serve tawa pulao hot with (tablespoon butter on top) lemon wedges, cooling raita and fresh kachumber salad.

This recipe will make anyone happy to eat a vegetarian dish, I threw the kitchen sink of vegies in with everything. The rich spices and rice enhanced it all to make a meal to enjoy and want for more.

Pressure cook red potatoes in instant pot for 8 minutes on high pressure mode with pressure valve in sealing position.

Once done let the pressure release naturally for 10 minutes and then do a quick release.

Arrange the wheat crispies (puri) in a tray

On each crispy, put a teaspoonful of mashed potatoes, chopped onions, green and tamarind/date chutney. Sprinkle some salt and chaat masala.
