Creamy mushroom pasta is packed with buttery garlicky mushrooms swimming in a delicious creamy Parmesan sauce. Quick and easy make in 20 minutes.

Creamy Mushroom Pasta

dry pasta, spaghetti, fettuccine, or linguine

olive oil

+ 1/2 lb. brown mushrooms, halved

salt

black pepper

butter

garlic,

all-purpose flour

heavy cream (or half and half cream)

Parmesan cheese, grated

cup fresh parsley, finely chopped

Bring a large pot of salted water to a boil over medium-high heat. Add pasta and cook until al dente (fully cooked but still firm), or according to package directions, about 10 minutes. Drain well and set aside in the pot. Drizzle a little olive oil and toss together to keep the pasta from sticking together.

In a large skillet, heat olive oil over medium-high heat for 2 minutes until the hot oil sizzles. Add mushrooms and season with salt and pepper. Sauté for 5-7 minutes until nicely browned on all sides.

Add butter, garlic and flour. Stir well for 1 minute until fragrant and well-combined

Add heavy cream, parsley and Parmesan cheese, and parsley. Stir well and bring the sauce to a simmer. Reduce heat to medium and keep stirring until thickened to a desired consistency.

Add cooked spaghetti into creamy mushroom sauce and toss well to combine. Sprinkle with extra Parmesan and fresh parsley on top, and serve immediately.

Healthy Mushroom Alfredo Pasta Bake with pan-roasted mushrooms, whole wheat penne pasta, creamy cauliflower sauce, and Gruyere cheese.

Mushroom Alfredo Penne Bake

whole wheat penne pasta

cauliflower (about 6-7 cups of florets)

chicken broth, divided

milk

garlic

mushrooms

butter, divided

Gruyere cheese

fresh sage, sliced into thin ribbons

extras: caramelized onions, bacon, sausage

Bring a large pot of water to boil. Cook the pasta for 5 minutes &#8211; it should still be a little firm. Drain, toss with a drizzle of oil, and set aside.

Bring a large pot of water to a boil, add the cauliflower, and cook for 5 minutes until tender-crisp. Meanwhile saute the minced garlic with a tablespoon of butter. Using a slotted spoon, transfer the cooked cauliflower to a blender with 2 cups broth, milk, oil, salt, and sauteed garlic. Puree until very smooth. You might need to do this in batches.

Preheat the oven to 400 degrees. Heat the 3 tablespoons butter in a very large skillet. Add the mushrooms and saute until golden brown.

Toss the cooked pasta, cauliflower sauce, and mushrooms together. Add the remaining cup of broth to help the consistency stay saucy.

Transfer to a deep 9&#215;13 baking dish. Sprinkle with cheese and bake uncovered at 400 for 10-15 minutes. Some of the moisture from the mushrooms will seep out &#8211; give it a quick stir to reincorporate it and make it creamy. Top with fresh sage ribbons.

Chicken and Mushroom Fettuccine Alfredo is an easy weeknight or weekend meal made even faster if you have leftover chicken. One-pot means keeping this simple while everything is simmered together.

One-Pot Chicken and Mushroom Fettuccine Alfredo

onion

chicken breast (diced)

chicken stock

heavy cream

cremini mushrooms (thinly sliced)

basil leaf (thinly sliced)

pepper

garlic powder

fettuccini noodles (broken in half)

parmesan

parmesan cheese (for garnish)

In a large 6 quart dutch oven add the oil and onion.  Sauté over medium high heat until tender.   Remove and set aside on a plate.

Add the chicken and cook until no longer pink.

Add in chicken stock, heavy cream, onion, mushrooms, basil, salt, pepper, garlic powder and fetucchini noodles.  Bring to a simmer and cook for 10-15 minutes or until pasta is al dente.

Fold in parmesan cheese and garnish with additonal parmesan cheese if desired.
