Date Night Mushroom Fettuccine

cup Land O Lakes® Butter, divided

fresh minced garlic, garlic salt

mushrooms (more if you love mushrooms!)

heavy whipping cream

fettuccine

Parmesan cheese

pasta water

salt (more

black pepper

parsley

Clean the mushrooms. Add the garlic and mushrooms to a large skillet with 2 tablespoons of the butter. Sauté until the mushrooms are soft with deep brown color &#8211; 10-15 minutes. Add the cream and the rest of the butter. Simmer over low heat.

Cook the fettuccine in a large pot according to package directions. Drain, reserving a little bit of the water, and return to pan.

Add mushroom sauce to the hot fettuccine in the pan. Toss with tongs to mix. Add Parmesan and up to 1 cup of reserved pasta water as needed to get the consistency right. Season with salt and pepper. And now stand at the stove and eat it straight out the pan. So good.

This is so easy and so so tasty! On the favourites list! I serve it with Italian breaded chicken (breadcrumbs, parmesan and Italian herbs). Yum!

I am definitely one of your mushroom peeps.  There isn't a mushroom I haven't liked.  Homemade fettuccine is so much better than store-bought.  I'm saving this for this weekend.  Can't wait!

This maybe isn't technically a 'twist,' but here's what sets it apart from most recipes on this blog - a stick of butter and a cup of heavy cream!  Hence, date night!  Cuz you splurge!  I made it tonight and it's silky and yummy!

Mushrooms YES YES!  I'm a huge fan of mushrooms because they provide a "meatiness" without any actual meat.  Plus, they go perfectly with pasta!

I love how easy this recipe is!  With date night, you definitely don't want to follow anything too complicated.  This is perfect and the pictures are mouthwatering!  I don't eat dairy too often, but I would definitely make an exception for this!

Love this. Easy. Simple.  Friday night perfect. It was kind of a tough teaching week, finally got a quiet evening and so appreciated this. I know you get this! I've made this recipe twice now, and my husband has requested this go into our regular rotation.  I'm not a huge mushroom fan, but I really enjoyed this dish.

This Easy Italian Mushroom Fettuccine is a tasty Italian Pasta Dish, fresh herbs make this simple dish delicious and perfect, made the Classic Italian way.

Easy Italian Mushroom Fettuccine

galletti mushrooms chopped, (also known as chanterelles

white mushrooms chopped* ((100 grams))

salt ((more

olive oil ((50 grams))

garlic

Italian parsley ((7 grams))

hot pepper flakes

water

fettuccine** ((500-600 grams))

In a large saucepan add olive oil, mushrooms, salt, garlic, chopped Italian parsley, hot pepper flakes and water. Cook on medium heat for approximately 20-25 minutes, until mushrooms are tender and water has evaporated.&nbsp;

While mushrooms are cooking cook the fettuccine in boiling salted water until al dente, drain then add to the cooked mushrooms along with half a ladle of pasta water. Cook on medium heat while tossing until water has evaporated and becomes almost creamy.  Serve immediately. Top with freshly grated parmesan or pecorino cheese if desired. Enjoy!

The pasta is cooked with a touch of white wine to enhance the richness of the mushrooms, and it’s finished off with Parmesan for a savory, comforting meal. This vegetarian dish is perfect for busy weeknights or as a cozy dinner option.

Mushroom Fettuccine

dry fettuccine

tbsps. butter

olive oil

tsps. minced garlic

red pepper flakes

1-1/2 lbs. sliced baby bella mushrooms (or other mushrooms)

dry red wine

grated Parmesan (plus more for garnish)

salt

Cook the pasta in a large pot of boiling salted water according to the package directions. Drain, reserving 1/2 to 1 cup of the pasta water; set aside.

Heat butter and oil in a sauté pan over medium-high heat. Once the bubbles subside, add garlic and pepper flakes, and cook for 1 minute. Stir in the mushrooms and cook until they release their liquid and it nearly evaporates, about 20 minutes. Deglaze the pan with wine, and simmer until the wine is almost evaporated.

Add the fettuccine to the pan and stir in the reserved pasta water, 1/4 cup at a time, until the pasta is loosely coated. Remove from heat, toss the pasta with Parmesan, and season with salt. Garnish each serving with chopped parsley and more Parmesan.

We love this. I do the mushrooms with bacon. I don’t like wine so I deglaze with mushroom stock and I add a portobello cut up.  It is to die for!

Ive just made this and Im eating it now.  I couldn't find red pepper flakes so I used a black and red pepper and a lame wine but this still tastes amazing!! Def a quick, cheap and easy meal, thank you!

A-ma-zing. I made this for dinner last night and the smell alone was enough to bring my husband drooling into the kitchen. I literally had smack his hand to stop him eating the mushrooms while they cooked...If I hadn't been so vigilant he probably would've ate every last one.  The only complaint he had was  that it's meatless-he doesn't understand that vegetarian is an option sometimes.  I like what Tiffany said about adding steak-I think that would be the perfect protein.
