firstly, in a small mixi jar take 1 tbsp pepper, ½ tsp fennel, ½ tsp cumin and ½ tsp coriander seeds.

blend to coarse powder without adding any water. keep aside

now in a large kadai heat 2 tbsp ghee and splutter 1 tsp mustard, 2 dried red chilli and few curry leaves.

also, add 1 inch ginger and ½ onion.

saute until onions shrink slightly.

further, add 300 grams mushroom and stir fry on high flame.

saute until onions shrink slightly and moisture is released.

further, add ½ capsicum and stir fry for 2 minutes.

now add the prepared pepper masala powder and ½ tsp salt.

mix well making sure all the spices are well coated.

finally, enjoy mushroom pepper fry with phulka or rice.

Mushroom Pepper Fry

onions (or 1 large onion or 1 cup thinly sliced onions)

Firstly take 1 tablespoon black pepper + 1 teaspoon fennel seeds in a dry grinder or a coffee grinder.

Grind to a coarse powder. Keep aside.&nbsp;

Also slice 1 large onion, 200 grams mushrooms, 1 medium to large capsicum and 1 green chili.

Heat 2 tablespoons coconut oil in a pan.

Add 1/2 teaspoon mustard seeds and let them crackle.

After the mustard seeds crackle, then add 1 cup thinly sliced onions.

Mix the onions very well and saute on a low to medium flame, till they start to turn light golden.

Then add 1/2 teaspoon ginger-garlic paste and saute till the raw aroma of ginger-garlic goes away.

Now add the sliced mushrooms.

Mix very well and saute mushrooms on a medium flame.

First the mushrooms will release a lot of water.

Continue to saute till all the water has evaporated and the mushrooms are almost cooked.

Then add 1 cup sliced bell peppers and mix well.

Saute the capsicum slices till they are half cooked. They should have some crunch in them.

Then add 1 green chili, sliced or chopped and 2 teaspoons chopped curry leaves and mix well.

Now add the coarsely powdered black pepper and fennel seeds along with 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder and a pinch of turmeric powder.

Mix all the spices very well with the mushroom and capsicum mixture.

Season with salt.

Mix again and then switch off the flame. Check the taste of mushroom pepper fry. Add more salt if required.

Add 2 tablespoons chopped coriander leaves. Stir.

Serve mushroom pepper fry hot with chapatis or rotis.

This simple mushroom pepper fry is amazingly flavorful, delicious and easy to make. This can be served with rice, roti or even with bread and wraps as a stuffing.

To make mushroom pepper fry, first make the spice powder. Add fennel seeds and black pepper to a grinder jar and powder them.

Pour oil to a hot pan. Add cumin seeds and chopped garlic. Saute until the garlic smells good for a minute or so.

Add tomatoes, salt and turmeric. Cook until the tomatoes break down and become mushy and soft.

Next add capsicum, chilies and onions. Saute on a high flame until the raw smell of onions is gone.

Add mushrooms &amp; fry on a high heat for 3 mins. If you see the mushrooms letting out moisture, stir fry on the highest heat until the mushrooms become slightly tender.

Then add crushed pepper, fennel seeds and curry leaves. Fry for 2 to 3 mins until you begin to smell the spices good.

Turn off when the mushrooms are done to your liking. Do not overcook as they become mushy. Remove mushroom pepper fry to a wide serving bowl and leave uncovered for a while to avoid building up moisture.

Serve mushroom pepper fry with rice or roti. or stuff it to make wraps and sandwiches.
